Chicken Fajita Salad

I really do like chicken fajitas, but I like a chicken fajita salad even better.



CHICKEN FAJITA SALAD

(serves 4)


Fajita Ingredients:

*1 1/2  pounds boneless-skinless chicken breasts or thighs

*1 teaspoon chili powder

*1 teaspoon ground cumin

*1/2 teaspoon garlic powder

*1/8 teaspoon onion powder

*1/4 teaspoon granulated sugar

*1/2 teaspoon salt

*1/2 teaspoon ground black pepper

*2 tablespoons olive oil

*1 yellow bell pepper, deseeded and sliced thin

*1 red bell pepper, deseeded and sliced thin

*1/2 green bell pepper, deseeded and sliced thin

*1 white onion, sliced thin

*1 (5 ounce container ) mixed greens or your favorite lettuce (about 5-6 cups)

*1 avocado, sliced (optional)

*your favorite salad dressing (I use cilantro lime dressing) or just top it with salsa

*sour cream (optional)


Directions:

~In a small bowl or baggie, mix the chili powder, cumin, garlic powder, onion powder, sugar, salt, and pepper.

~Sprinkle about 1/3 of mixture over one side of chicken.

~Grease grill or skillet with a little olive oil.

~Grill chicken seasoned side down, over medium-high heat until done (5-7 minutes per side depending on how thick the chicken is).

~Remove chicken from grill (or skillet) and set aside.

~In a medium-sized bowl, add olive oil and the rest of the seasoning mix and whisk together.

~Add cut veggies and coat well.

~Grill veggies, until desired doneness (3-5 minutes).

~Remove from grill (or skillet).

~Divide salad greens into 4 bowls.

~Slice chicken into strips.

~Place chicken, grilled veggies and avocado over salad greens.

~Drizzle salad dressing or salsa over salad

~Top with a dollop of sour cream (optional)


Variation:

`add a few tortilla strips to top of salad.
