Mint Chocolate Rice Krispy Treats

This might be my favorite flavor of rice krispy treats.  You can make the basic rice Krispy treats with butter and marshmallows, if pefer.  Just add the peppermint extract to it, once the marshmallow are melted.


MINT CHOCOLATE RICE KRIPY TREATS

(serves 24)


Ingredients:

*1 cup light corn syrup

*1 cup granulated sugar

*1/2 cup creamy peanut butter 

*green food coloring

*1/2 teaspoon peppermint extract

*6 cups rice krispy cereal

*2 cups semi-sweet chocolate chips


Directions:

~Coat a 9x13 inch pan with cooking spray.

~Preheat oven to 200 degrees.

~In a large saucepan, combine 1 cup corn syrup and 1 cup granulated sugar.

~Cook over medium heat, stirring often, until the sugar has dissolved and just short of a boil.

~Remove from heat.

~Stir in 1/4 cup peanut butter, a couple drops of green food coloring and 1/2 teaspoon peppermint extract.  Stir until butter is melted.

~Stir in 6 cups Rice Krispies until well coated.

~Press into prepared pan.

~Sprinkle 2 cups semi sweet-chocolate chips and 1 cup milk chocolate chips evenly over rice krispy treats.

~Place into oven.

~Bake for 10 minutes or until chocolate chips are very soft.

~Remove from oven and spread softened chips evenly over rice krispy treats.

~Let stand for at 30 minutes or until the chocolate mixture is firm.

S'more Krispy Treats

Even though I don't use rice crispy cereal in this recipe, I call the rice Krispy treats.   These are  one of my granddaughters favorite.



S'MORE KRISPY TREATS 

(serves 16)


Ingredients:

*1 (12 ounce) box  golden graham cereal, about  7 cups  (can use rice Krispy)

*1 (10 once) bag of mini marshmallows

*1/4 cup butter

*1 (8.45 ounce) package snack size hershey's bar, broken into bite size pieces

*Pinch of sea salt


Directions:

~Preheat oven to 350 degrees.

~Spray a 9x13 inch pan with cooking spray.

~In a large pot, melt 1/4 cup butter and 1 (10 ounce) bag of marshmallows.

~Once melted, remove from heat and stir in 1 (12 ounce) box of golden graham cereal, making sure it's completely coated. 

~Spread of mixture into prepared pan (I get my hands a little wet and pat it down, to prevent sticking).

~Place 1 (8.45 ounce) package of broken up snack size Hershey's bar evenly over mixture.

~Spread the remaining half of rice krispy mixture over chocolate.

~Place in preheated oven for 10 minutes.

~Remove and allow mixture to set before cutting (1-2 hours)

Pumpkin Spice Rice Krispie Treats

Looking for something easy, quick and good to make for a fall get together?  Here's the thing.   You can only find these pumpkin spice chips in the fall.



PUMPKIN SPICE RICE KRISPIE TREATS

(serves 16-20)


Ingredients:
*1 cup light corn syrup
*1 cup granulated white sugar
*2 teaspoons pumpkin pie spice
*1/2 cup creamy peanut butter
*1 teaspoon pure vanilla extract or 1/4 teaspoon maple flavoring
*6 cups rice Krispies
*1-2 cups white chocolate chips (I use 1 cup)
*1/2 teaspoon pumpkin pie spice
*1/2 - 1 cup Kraft caramel bits  (I use 1/2 cup)

Directions:
~Spay a 9x13 inch pan with cookie spray.
~Preheat oven to 200 degrees.
~In a  large bowl pour rice krispies and oatmeal and mix. 
~In a large sauce pan, combine corn syrup, pumpkin  pie spice and sugar.
~Cook over medium heat, stirring often, until sugar dissolves and is just short of a boil.
~Remove from heat.
~Stir in vanilla and peanut butter.
~Stir until peanut butter is melted.
~Pour mixture over rice krispy mixture.
~Stir until coated.
~Press into prepared pan.
~Sprinkle white chocolate chips over rice krispy mixture.
~Sprinkle  1 teaspoon pumpkin pie spice evenly over white chocolate chips.
~Bake for 5 minutes.
~Remove from oven and with a knife, spread softened chips evenly over rice Krispy treats.
~Sprinkle desired amount of caramel bits evenly over rice Krispy treats.
~Place in oven.
~Bake for another 5 minutes or until chips and caramel become very soft.
~Remove from oven and with a knife, smush soften chips.
~Don't cut until the rice Krispy treats are firm.

Salted Caramel Peanut Butter Rice Krispie Treats

So delicious, but may be a little habit forming.   Love the salt and caramel mixture.  You can put this on the rice krispies that's made with marshmallows.   I just like this recipe better.  




SALTED CARAMEL PEANUTT BUTTTER RICE KRISPIE TREATS


Ingredients:

*1 cup light corn syrup

*1 cup granulated sugar

*1 cup creamy peanut butter

*1 teaspoon pure vanilla extract

*6 cups rice Krispies

*1 (11 ounce) package kraft caramels, unwrapped 

*2 tablespoons heavy cream

*1 1/2 tablespoons coarse sea salt


Directions:

~Spray a 9x13 inch baking pan with cooking spray.

~In a large sauce pan, combine corn syrup and sugar.

~Cook over medium heat, stirring often, until sugar is dissolved and is just short of a boil.

~Remove from heat, stir in vanilla and peanut butter until the peanut butter is melted.

~Stir in rice Krispies until well coated.

~Press into a prepared pan.

~Place caramels and heavy cream into a small bowl.

~Microwave for  15-20 second interval, stirring in between each round, until completely melted.

~Pour over Rice Krispie bars until evenly coated.

~Sprinkle with sea salt while caramel is still warm.

~Allow to set, before cutting.

Salted Caramel Chocolate Rice Krispy Treats

Ooey-Gooey Goodness.    I love the mixture of chocolate caramel and salt.   You can skip the chocolate and just have the salted caramel for the topping.  Both are equally good.




SALTED CARAMEL CHOCOALTE RICE KRISPY TREATS
(serves 16-20)

Ingredients:
*1 cup light corn syrup
*1 cup granulated white sugar
*1 cup creamy peanut butter
*1 teaspoon pure vanilla extract
*6 cups rice krispies
*1/2 cup Kraft Caramel Bits (sold by chocolate chips)
*2 teaspoons milk
*coarse sea salt for sprinkling
*2 cups milk or semi-sweet chocolate chips

Directions:
~Spay a 9x13 inch pan with cookie spray.
~Preheat oven to 200 degrees.
~In a  large bowl, mix chopped peanut butter cups and rice krispies.
~In a large sauce pan, combine corn syrup and sugar.
~Cook over medium heat, stirring often, until sugar dissolves and is just short of a boil.
~Remove from heat.
~Stir in vanilla and peanut butter.
~Stir until peanut butter is melted.
~Pour mixture over rice krispy mixture.
~Stir until coated.
~Press into prepared pan.
~Sprinkle chocolate chips over rice krispy bars.
~Place in oven
~Bake for 5-10 minutes or until chips become very soft.
~Remove from oven and with a knife, spread soften chips evenly over rice kripy treats.
~In a medium microwave safe bowl, combine caramels and milk.
~Microwave on high for 40-60 seconds (until caramel is almost all melted)
~Remove from microwave and stir until smooth.
~Drizzle over rice krispy treats.
~Let stand until chocolate is firm.

S'more Krispie Treats

Rice Krispie Treats meet S'mores.  I don't image it's low in calories, but oh how delicious.










S'MORE KRISPIE TREATS
(serves 24)


Rice Krispie Ingredients:
*1 cup light corn syrup
*1 cup granulated sugar
*1 cup peanut butter
*6 cups Golden Grahams
*1 teaspoon pure vanilla extract
Filling Ingredients:
*2 cups mini marshmallows
*Hershey's chocolate bars, broken into pieces (I use about 4 of them)


Rice Krispie Directions:
~Spray a 9x13 inch baking dish with cooking spray.
~Preheat oven to 350 degrees.
~In a large saucepan combine 1 cup corn syrup and 1 cup grnulaated sugar
~Cook over medium heat, stirring often until sugar is dissolved and just short of a boil.
~Remove from heat.
~Stir in 1 teaspoon vanilla and 1 cup peanut butter. Stir until peanut butter is melted.
~Add 6 cups Golden Grahams  and stir until well coated.
~Pour half of the mixture into a greased 9x13 inch baking dish.
~Sprinkle 2 cups mini marshmallows evenly over the mixture.
~Add broken up chocolate bars evenly over marshmallows.
~Spread remaining cereal mixture over top.
~Place in oven and bake for about 4 minutes.
~Remove from oven and allow to set before cutting.

Oreo Krispy Treats

Mixing Oreos into rice krispy treats is awesome.  Such an easy treat to make.



OREO KRISPY TREATS
(serves 24)


Ingredients:
*1 cup light corn syrup
*1 cup granulated white sugar
*1 cup peanut butter
*1 teaspoon pure vanilla extract
*6 cups rice krispie
*20 oreos, crushed
*2 cup white or milk chocolate, melted

Directions:
~Spray a 9x13 inch pan with a cooking spay.
~In a large bowl, mix crushed oreos & rice krispy.
~In a large saucepan, combine corn syrup & sugar.
~Cook over medium heat, stirring often, until sugar dissolves and just short of a boil.
~Remove from heat.
~Stir in vanilla & peanut butter.
~Stir until peanut butter is melted.
~Pour mixture over oreo & rice krispy mixture.
~Stir until well coated.
~Press into prepared pan.
~Drizzle melted chocolate over rice krispy bars.
~Cut once it is cooled.

Frosted Rice Krispie Treats

These are awesome and to be honest, very hard to stop eating. Very easy to make, but make sure you don't let them come to a boil or they will be hard.


FROSTED RICE KRISPIE TREATS
(serves 24)

Ingredients:
*1 cup light corn syrup
*1 cup granulated sugar
*1 cup creamy peanut butter
*6 cups Rice Krispies
*1 teaspoon pure vanilla extract
*2 cups milk chocolate chips
*1 cup butterscotch chips

Directions:
~Coat a 9x13 inch pan with cooking spray.
~Preheat oven to 200 degrees.
~In a large saucepan combine 1 cup corn syrup and 1 cup granulated sugar.
~Cook over medium heat, stirring often, until sugar has dissolved and just short of a boil.
~Remove from heat.
~Stir in 1 teaspoon vanilla extract  and 1 cup creamy peanut butter. Stir until peanut butter is melted.
~Add 6 cups Rice Krispies.
~Stir until well coated.
~Press mixture into prepared pan.
~Sprinkle 2 cups chocolate chips and 1 cup butterscotch chips evenly over Rice Krispie treats.
~Place treats into oven.
~Bake for 5-10 minutes or until chips are very soft.
~Remove from oven and spread softened chips evenly over rice krispy treats.
~Let stand until chocolate mixture is firm.
~Cut into squares once cooled & set.
