Celery Salad

 One of my favorite salads.  I either use broccoli or radish micro greens.   You can use fresh parsley or finely chopped broccoli.



CELERY SALAD 

(serves 6-8)


Salad Ingredients:

*4-6 stalks of celery, chopped small

*2-3 apples (I use fuji), chopped small

*1 small to medium cucumber, chopped small

*1 cup micro greens 

*1 cup dried cranberries 

*1 cup pecans, chopped

Dressing Ingredients:

*1 cup mayonnaise 

*1/8 cup extra virgin olive oil 

*juice from one lemon

*1 garlic clove, minced

*1/4 cup fresh dill, chopped (or 1 tablespoon dried)

*1/2 teaspoon salt

*1/2 teaspoon ground black pepper

*1/4 teaspoon red pepper flakes

*1 green onion, chopped

*1/2 teaspoon dijon mustard

*1/2 cup finely grated parmesan cheese


Salad Directions:

~In a large bowl, mix 4-6 chopped celery stalks, 2-3 chopped apples, 1 chopped cucumber, 1 cup dried cranberries, 1 cup micro greens, and 1 cup chopped pecans until well mixed.

Dressing Directions:

~In a medium bowl,  stir 1 cup mayonnaise, 1/8 cup extra virgin olive oil, juice squeezed from 1 lemon, 1 minced garlic clove, 1/4 cup chopped fresh dill, 1/2 teaspoon salt, 1/2 teaspoon ground black pepper, 1/4 teaspoon red pepper flakes, 1 green chopped onion, and 1/2 teaspoon dijon mustard together until well incorporated.

~Stir in 1/2  cup finely grated Parmesan cheese.

~Pour over salad and mix until all veggies are evenly coated.

~Cover and refrigerate for at least 1 hour (I do this step for 3-4 hours).

BBQ Potato Chips

 These by far are my favorite homemade potato chips.  To get crispy chips, make sure you rinse them 3-5 times.  




BBQ POTATO CHIPS

(serves 4-6)


Ingredients:

*4 medium russet potatoes

*Vegetable Oil for frying

*4 tablespoons light brown sugar

*4 teaspoon smoked paprika 

*2 teaspoon garlic powder

*1/2 teaspoon onion powder

*1/8-1/4 teaspoon ground cayenne pepper (optional)

*1/4 teaspoon salt


Spice Directions:

~In a blender, add 4 tablespoons brown sugar, 4 teaspoons smoked paprika, 2 teaspoons garlic powder, 1/2 teaspoons onion powder, 1/8-1/4 teaspoons cayenne pepper, and 1/4 teaspoons salt.

~Blend until mixture is a fine powder.

~Place mixture into a large bowl (I normally just add a quarter of the mixture at a time).

Chip Directions:

~Peel 4 russet potatoes, and slice thin on a mandolin slicer (on thinest setting)

~Place sliced potatoes into a bowl of cold water.

~Move potatoes around in water to remove starch from potatoes.

~Drain a repeat 2 or 3 more times or until water stays clear.

~Bring a pot of water to a boil.

~Add potatoes (about a quarter of them).

~Boil for 4 minutes, and remove and place in a bowl of cold water (add cold water as needed).

~ Repeat until all the potatoes have been boiled.

~Place potatoes on a tea towel, or paper towels in a single row.

~Place another tea towel or paper towels over top to dry potatoes.

~In a large heavy bottom frying pan, add vegetable oil (about 4-inches deep).

~Heat oil to 375 degrees.

~Place potatoes into hot grease one at a time, do not over crowd pan  (I can add about 25 slices to my pan).

~Fry for about 4 minutes or until crispy (I turn mine half way through)

~Remove from heat and place on a paper towels lined cookie sheet.

~Place into the large bowl with bbq seasonings.

~Toss until well coated.

~Remove and place onto a plate and repeat until all the potatoes chips are done.

BLT Pasta Salad

 Who doesn't love a BLT?  Now just add some pasta and yum-o.





BLT PASTA SALAD 

(serves 6)


Ingredients:

*1 pound bacon, cut up and cooked 

*1 (16 ounce) container cherry/grape tomatoes, cut in half

*1 (5 ounce) container salad greens, roughly chopped

*1 (8 ounce) package bowtie pasta, cooked as directed on package

*1 cup sour cream

*1/2 cup mayonnaise 

*1 teaspoon Worcestershire sauce

*1/8 teaspoon minced garlic

*1/8 teaspoon minced onion

*salt & pepper to taste


Directions:

~Cook pasta as directed on package, drain and rinse under cold water.

~In a large bowl, add drained cooled pasta, tomatoes, and lettuce.

~In small bowl, whisk sour cream, mayo, Worcestershire sauce, minced garlic, minced onion salt and pepper.

~Cut up bacon and fry util crispy.

~Remove bacon and set aside.

~Drain all but about 1 tablespoon bacon grease.

~Place sour cream mixture into hot pan and turn burner on to low.

~Add bacon and cook for 1 minute, stirring continuously .

~Add to pasta mixture and stir until well coated.

Creamy Cucumbers

 Great summer side dish.   I like to pair this with potato salad and bbq chicken.   You can use greek yogurt in the place of mayo if you would like.

CREAMY CUCUMBERS 

(serves 8)


Ingredients:

*2 large cucumbers, peeled and sliced thin

*1 medium sweet onion, sliced thin

*2 garlic cloves, minced fine (I use a microplane)

*1 cup mayonnaise 

*1/2 cup sour cream

*2 tablespoons white vinegar

*1 heaping teaspoon dried dill weed

*1 1/2 teaspoons granulated sugar

*1 teaspoon garlic powder 

*1 1/2 teaspoon ground black pepper


Directions:

~In a medium bowl, mix cucumbers, onion, minced garlic, and salt together.

~Cover bowl with plastic wrap and allow to sit for 30 minutes.

~Dump cucumber mixer into a colander and allow moisture to drain for 30 minutes, stirring every 10 minutes.  

~In a large bowl, whisk mayonnaise, sour cream, vinegar, dill weed, sugar, garlic powder and pepper together.

~Add cucumber mixture and stir until well mixed.

~Cover and refrigerate for at least 3 hours.

Cole Slaw

Great for a side dish for anything barbecue and awesome on a pulled pork sandwich.   To tell the truth the only thing I like Cole slaw on it a pulled pork sandwich.  To make this even easier to make you can buy a bag of Cole slaw and not use the cabbage, carrots and red onion.





COLE SLAW 
(serves 6-8)

Ingredients:
*1 head green cabbage, shredded
*2 carrots, grated
*1 red onion, chopped small
*1 teaspoon mustard 
*3 teaspoons apple cider vinegar 
*1 1/2  cups mayonnaise
*1 tablespoon granulated sugar
*1/2 teaspoon celery seed
*1 teaspoon  ground black pepper

Directions:
~Combine all the ingredients in a large bowl, and mix well.
~Cover and refrigerate for a least 3 hours.

Marinated Veggie Salad

So easy to make.  Especially good when all the garden fresh veggies are in to use.   Sometimes I add broccoli to this recipe.   Add or delete what you like.


MARINATED VEGGIE SALAD
(serves 6)

Ingredients:
*1 - 1 1/2 cup of zesty Italian dressing (I make my own)
*1 medium red onions, chopped
*2 cucumber, chopped
*2 carrots, chopped
*2 stalks celery, chopped
*1 green pepper, chopped
*1 red peppers, chopped
*1 (8 ounce) cherry or grape tomatoes, cut in half
*1-2 tablespoons Salad Supreme spice mixture
*1 teaspoon black pepper
*1 teaspoon salt

Directions:
~Add all the ingredients into a large bowl and mix.
~Cover and refrigerate for at least 2 hours.





Spaghetti Salad

This is such an easy recipe.  Great for picnics or barbecues.




SPAGHETTI SALAD
(serves 8)

Ingredients:
*1 pound spaghetti noodles (I like to make homemade)
*1 (8 ounce) bottle of zesty italian dressing (I make my own)
*1 bunch green onions, chopped
*1-2 cucumber, chopped
*2 carrots, chopped
*3 stalks celery, chopped
*1 green pepper, chopped
*1 red peppers, chopped
*1 (8 ounce) cherry or grape tomatoes, cut in half
*3 tablespoons Salad Supreme spice (I make my own)
*1 teaspoon ground black pepper
*1/2 teaspoon salt

Directions:
~Bring a large pot of salted water too a boil.
~Add pasta and cook until al dente.
~Drain and cool under cold water.
~Combine cooked pasted with veggies, Italian dressing, salt, pepper and salad supreme and mix well.
~Refrigerate for at least 4 hours.

Gourmet Bacon Coney Dogs

I love a good chili dog but every once in a while I like to step it up a bit.  This one does that.  I mean, bacon makes anything better.  Chili sauce will make or break a coney dog. So buy a good one or make your own.





GOURMET BACON CONEY DOGS
(serves 4)

Ingredients:
*1 cup coney sauce (I make my own)
*4 hot dogs
*4 slices bacon, cooked & crumbled
*1/2 cup cheddar cheese
*1/4 yellow onion, chopped
*4 teaspoons sour cream
*yellow mustard
*4 hot dog buns

Directions:

~Grill hot dogs.
~Toast hot dog buns
~Put hot dog on bun & divide all the toppings evenly among the hot dogs.

Bacon Vegetable Pasta Salad

This is another salad that is good as a side dish or as a light meal.  We really enjoy this one.


BACON VEGETABLE PASTA SALAD
(serves 8)

Ingredients:
*1 (12 ounce) package uncooked rotini pasta
*10 slices bacon
*3/4 cup mayonnaise
*4 tablespoons dry ranch salad dressing mix
*1/4 teaspoon garlic powder
*1/4 teaspoon seasoned pepper
*1/2 cup milk, or as needed
*1 large tomato, chopped
*1 carrot, peeled & sliced
*1/2 cup red pepper, chopped
*1 cucumber, seeds removed & diced
*1 1/2 cups cheddar cheese, diced

Directions:
~Bring a large pot of lightly salted water to a boil.
~Stir in rotini pasta and cook for 10-12 minutes, drain.
~Place bacon in a skillet over medium-high heat and cook until evenly brown.
~Drain, cool & crumble bacon.
~In a small bowl, whisk together mayonnaise, ranch dressing mix, garlic powder, seasoned pepper & milk, until smooth.
~Place bacon, tomato, carrot, red pepper, cucumber, rotini, cheese and dressing in a large bowl toss until well coated.
~Cover and chill for at least 1 hour in the refrigerator.

Variation:

-Add 1/2 cup black olives

Sesame Chicken Salad

Great for lunch, dinner, picnic, or snack.



SESAME CHICKEN SALAD
(serves 6-8)

Ingredients:
*1/4 cup sesame seeds
*1 (16 ounce) package of spiral noodles
*1/4 cup vegetable oil
*1/3 cup soy sauce
*1/3 cup rice vinegar
*1 teaspoon sesame oil
*3 tablespoon white sugar
*1/2 teaspoon ground ginger
*1/4 teaspoon ground black pepper
*3 cups chicken breast, cooked, cooled & shredded
*1/2 teaspoon dried cilantro
*1/4 cup shredded carrots
*1/3 cup cucumbers, sliced
*1/3 cup red bell pepper, seeded and chopped
*1/3 cup green onions, chopped

Directions:
~Heat a small pan over medium-high heat.
~Add sesame seeds, stirring often, until lightly toasted.
~Remove from heat, and set aside.
~Bring a large pot of water to boil.
~Lightly salt water.
~Add pasta, cook for 8-10 minutes, or until al dente.
~Drain pasta.
~Rinse pasta under cold water until cool.
~Place drained, cooled pasta into a large bowl.
~Mix veggies & chicken into pasta.
~Combine vegetable oil, soy sauce, vinegar, sesame oil, sugar, sesame seeds, ginger & pepper in a container that you can close.
~Shake mixture well.
~Pour over pasta mixture and gently mix well until pasta is evenly coated.

Variation:
`omit chicken to make it vegetarian if you choose.

    Easy Baked Beans

    I do not like beans, but my family does.   This is such a simple way to make them and they are so good (according to my family).  I have two baked bean recipes.   This one is what I would call semi-homemade because of the canned pork & beans.  In the near future I'll post the Boston Baked Bean recipe.   That one takes longer to make.


    EASY BAKED BEANS
    (serves 6)

    Ingredients:
    *2 (15 ounce) cans pork & beans (bean with out pork for vegetarian)
    *1/2 cup brown sugar, packed
    *1 small onion, chopped
    *1 clove garlic, minced
    *1/2 cup ketchup
    *1/2 tablespoon prepared mustard
    *1 teaspoon worcestershire sauce
    *1 teaspoon liquid smoke
    *1 teaspoon apple cider vinegar
    *1/2 teaspoon salt
    *1/2 teaspoon black pepper
    *4 slices on bacon (optional)

    Directions:
    ~Preheat oven to 400 degrees.
    ~Place bacon on a cookie sheet and bake for 10-15 minutes (you want the bacon cooked but not crisp).
    ~Remove bacon from oven and let cool.
    ~Once bacon is cooled, cut into small pieces.
    ~Decrease oven temperature to 350 degrees.
    ~Combine beans, bacon, brown sugar, onion, garlic, ketchup, mustard, worcestershire sauce, liquid smoke, vinegar, salt & pepper in a 1 1/2 quart baking dish.
    ~Bake uncovered, for 1 hour.

    Deviled Eggs

    Such an easy side dish to bring for any potluck, picnic, or party. Use a pastry bag and star tip, and pipe the filling into the egg makes for a fancy looking deviled egg.



    DEVILED EGGS
    (serves 6)

    Ingredients:
    *6 hard-boiled eggs
    *4 tablespoons mayonnaise
    *1/8 teaspoon dill weed (optional)
    *1/4 teaspoon prepared mustard (optional)
    *1/4 teaspoon salt
    *1/4 teaspoon pepper
    *1/4 teaspoon paprika

    Directions:
    ~Slice 6 boiled eggs in half lengthwise.
    ~Remove yolks and set white aside.
    ~In a small bowl, mash yolks with fork.
    ~Add 4 tablespoons mayonnaise, 1/8 teaspoon dill weed, 1/4 teaspoon mustard, 1/4 teaspoon salt, 1/4 teaspoon ground black pepper, and 1/4 teaspoon ground paprika.
    ~Mix well.
    ~Stuff or pipe into egg whites.
    ~Cover and refrigerate until ready to serve.

    Variations:
    -Substitute mustard for spicy brown mustard.
    -Add 2 strips of bacon, cooked & crumbled.
    -Add 1/4 cup frozen spinach, thawed, squeezed dry, & chopped.
    -Add 1 teaspoon vinegar + 1 teaspoon white sugar to mayonnaise.
    -Add 1/8 teaspoon dried curry.

    BBQ Chicken

    I love the BBQ Sauce that goes on this chicken. I also use this for sauce for ribs.


    BBQ CHICKEN
    (serves 6)

    Ingredients:
    *6 chicken breasts (I use boneless, skinless)
    *1/2 medium onion, chopped fine
    *2 teaspoons minced garlic
    *1 1/2 cups water
    *1 (6 ounce) can tomato paste
    *1/2 cup white vinegar
    *1/2 cup brown sugar
    *2 tablespoon honey
    *1 tablespoon dark molasses
    *2 tablespoons worcestershire sauce
    *1 1/4 teaspoons liquid smoke flavoring
    *1/4 teaspoon cayenne pepper
    *2 teaspoons salt
    *1/2 teaspoon black pepper
    *1/4 teaspoon smoked paprika
    *1/4 teaspoon onion powder

    Directions:
    ~In a medium saucepan, 1/2 medium chopped onion, 2 teaspoons minced garlic, 1 1/2 cups water, 1 (6 ounce) can tomato paste, 1/2 cup vinegar, 1/2 cup brown sugar, 2 tablespoons honey, 1 tablespoons molasses, 2 tablespoons Worcestershire sauce, 1 1/2 teaspoons liquid smoke, 1/4 teaspoon cayenne pepper, 2 teaspoons salt, 1/2 teaspoon ground black pepper,1/4 teaspoon  paprika, and 1/4 teaspoon onion powder, over medium heat.
    ~Bring to a boil.
    ~Reduce heat, and simmer for 1-2 hours, or until sauce thickens.
    ~Preheat oven to 350 degrees.
    ~Place 6 chicken breasts in a 9x13 inch baking pan.
    ~Cover with aluminum foil, and bake for 15 minutes.
    ~Remove from oven and drain and grease.
    ~Pour 1 cup of BBQ Sauce over chicken.
    ~Cover and bake for 30 minutes.
    ~Uncover and continue baking another 30 minutes, or until chicken in done. Basting every every 15 minutes with reserved BBQ Sauce.

    Grilled Teriyaki Chicken

    If you like Teriyaki, you are going to love this. So easy and quick. My daughter Tonia really like this recipe.


    GRILLED TERIYAKI CHICKEN 
    (serves 6)

    Ingredients:
    *1 tablespoon cornstarch
    *1 tablespoon cold water
    *1/4 cup brown sugar
    *2 cloves garlic, minced
    *1/2 teaspoon ground ginger
    *1/2 cup soy sauce
    *1/4 cup cider vinegar
    *1/2 teaspoon ground black pepper
    *6 boneless skinless chicken breasts

    Directions:
    ~In a small saucepan over low heat, all the above ingredients, minus the chicken.
    ~Let sauce simmer for about 20 minutes, until it thickens.
    ~Let sauce cool.
    ~Place chicken and sauce into a gallon size zip-loc bag.
    ~Let marinate in the refrigerator overnight or for at least 6 hours.
    ~Preheat grill on medium-high heat or use a stove top grill.
    ~Remove chicken from zip-loc bag and place on hot grill.
    ~Turn chicken every 5 or 6 minutes, basting with extra sauce from zip-loc bag, until chicken in done.

    Variations:
    `Grill onions & pineapples when chicken is almost done. Baste with the teriyaki sauce, and serve over rice.

    Hobo Pies

    Hobo Pie making always brings back fun memories camping with my children, their friends and our friends. Grilled cheese hobo pies reminds of a funny story about my favorite adopted daughter, Erica. It was always fun seeing all the different things they could put in their hobo pies.
    HOBO PIE

    Ingredients:

    (The Original Pizza Hobo-Pie)
    *mozzarella cheese
    *pepperoni (optional)
    *pizza sauce
    *what ever you like on a pizza

    (Pie Hobo-Pie)
    *cherry pie filling
    *apple pie filling, with a dash of cinnamon
    *blueberry pie filling

    (Chicken Pot Pie Hobo-Pie)
    *one can cream of potato soup
    *1 cup shredded chicken, cooked
    *1 can veg-all, drained
    ~mix all theses ingredients and scoop a little in each pie.

    (Beef Stew Hobo-Pie)
    *Dinty Moore Beef Stew.

    (Grilled Cheese Hobo-Pie)
    *2 slices of favorite cheese
    *1 slice of tomato (optional)

    (Grilled Peanut Butter & Jelly Hobo-Pie)
    *Peanut Butter
    *Jelly (we omit the jelly)

    (Italian Grilled Cheese Hobo-Pie)
    *1-2 slices of mozzarella cheese
    *1 bay leaf

    (Reuben Hobo-Pie)
    *2 slices of rye bread
    *1/2 slice swiss cheese
    *1 ounce corn beef
    *1 tablespoon sauerkraut or coleslaw

    (Ravioli Hobo-Pie)
    *2 slices garlic toast
    *2-3 tablespoons ravioli
    *1 tablespoon spaghetti sauce
    *mozzarella cheese

    (Taco Hobo-Pie)
    *taco meat
    *salsa
    *shredded cheddar cheese
    *onions (optional)
    *sour cream (optional)

    (BBQ Chicken Hobo-Pie)
    *sliced chicken beast
    *canadian bacon
    *barbecue sauce
    *shredded monterey jack cheese

    (Fresh Veggie Hobo-Pie)
    *zucchini, cut very thin
    *squash, cut very thin
    *mushrooms, chopped small
    *mayo sauce (1/8 cup mayo, 1/8 teaspoon lemon juice, 1/8 teaspoon minced garlic, dash of salt & pepper mixed all together)

    (Pigs in a blanket Hobo-Pie)
    *hot dogs or sausage (cut up small)
    *refrigerated biscuits
    *cheddar cheese.

    Directions:
    ~Spray hobo pie maker with pam, if needed.
    ~Butter 2 slices of bread (any bread you prefer)
    ~Place bread butter side down in hobo pie maker.
    ~Fill with desired filling.
    ~Close and cook 1 or 2 minutes, until golden brown.
    Flip on cook 1 or 2 more minutes, until golden brown on both side. (careful not to burn it).

    Marinated Grilled Chicken

    I love this marinate. Makes for a very juicy chicken breast. Make some 'Old Fashion Potato Salad' (5-21-10) and some fresh green beans and you have a perfect summer dinner.




    MARINATED GRILLED CHICKEN 
    (serves 4)

    Ingredients:
    *1/4 cup olive oil
    *1/4 cup soy sauce
    *4 tablespoons fresh squeezed lemon juice
    *1 tablespoon liquid smoke flavoring
    *1 tablespoon spicy brown mustard
    *1 teaspoon ground black pepper
    *2 garlic cloves, grated
    *1 teaspoon onion, grated
    *1/2 teaspoon brown sugar
    *4 skinless, boneless chicken breast halves

    Directions:
    ~Mix olive oil, soy sauce, lemon juice, liquid smoke, spicy mustard, garlic, onion, brown sugar, & pepper in a gallon sized Ziplock bag.
    ~Pound chicken breasts to some what flat.
    ~Add chicken breasts to ziplock bag and seal.
    ~Allow chicken to marinate for 2-4 hours in the refrigerator.
    ~Preheat the grill for high heat. (or use stove top grill)
    ~Oil grill grate
    ~Discard marinade sauce, and place chicken on grate.
    ~Cook 5-8 minutes on each side, until juices run clear.

    Variations:
    `Substitute fresh squeezed lemon juice for ReaLemon.
    `Substitute fresh squeezed lemon juice for fresh squeezed lime juice.
    `Substitute fresh lemon juice for fresh squeezed orange juice
    `Substitute spicy brown mustard for honey mustard
    `Substitute fresh garlic for 1 teaspoon garlic powder
    `Substitute onion for 1/4 teaspoon onion powder
    `Omit brown sugar

    Helpful Hint: 
    When you buy your chicken, place your chicken in freezer bags along with the marinate. Then freeze. It will be ready for you whenever you are in mood for marinated grilled chicken.

    Lemonade

    I tried many different recipes for lemonade, and all of them failed my expectations. I was looking for good old fashion lemonade. I finally came across a recipe around 10 years ago and tweaked it a little to my liking and am now satisfied.

    (lemonade)

    (strawberry lemonade)


    LEMONADE 
    (serves 10- 12)

    Ingredients:
    *1 cup water
    *1 to 1 1/2 cups white sugar (I use 1 cup, don't like it to sweet)
    *1 1/2 cups fresh squeezed lemon juice (5-7 lemons)
    *7 cups cold water

    Directions:
    ~In a small saucepan, combine 1 cup sugar and 1 cup water.
    ~Stir and bring to a boil. Make sure sugar is dissolved.
    ~Remove from stove and let cool.
    ~Squeeze lemons, enough to make 1 1/2 cups juice.
    ~Remove any seeds that may have dropped in, but leave the pulp.
    ~Put lemon juice, sugar water, and the 7 cups cold water in pitcher, stir.
    ~Store in refrigerator, serve when cold.

    Variations:
    `You can use lemon juice from a bottle (ReaLemon), but I personally don't think it's as good
    `freezing it makes for a great slushie.
    `pour glass half way with lemonade and half with fresh brewed ice tea.
    `Take 1/2 cup water and 1/2 cup of fresh strawberries. Boil it. Strain mixture into your simple syrup (boiled sugar water), to catch all the seeds. Add to lemonade. (you could do this with raspberries, blueberries, kiwi, or mango's too) If you use a tart fruit add 1/2 cup sugar.
    `Add a couple mint leaves to the picture of lemonade
    `Replace the 7 cups water with soda water to make it a fizzy lemonade (also known as sparkling water, fizzy water and seltzer).

    Helpful Hint: I put the lemons in the microwave for about 20-30 seconds and then roll them on the counter. It makes it much easier to juice them.

    Old Fashion Potato Salad

    I decided to start with this, because it's getting close to picnic time and it's one of my top requested recipes by my friends. I have to admit, I am a potato salad snob. I do not like any that you buy from a store. No matter how much you doctor it up, in my view, "Yuck"! Nothing comes close to homemade potato salad.



    MOM'S POTATO SALAD 
     (serves 12)

    Ingredients:
    *5 pounds Idaho Potatoes, cooked, cooled, peeled and cubed
    *1 medium onion (I used red or yellow), chopped small
    *2 celery sticks (approximately 1/4 cup), chopped small
    *4 hard boiled eggs, cooled, peeled, and chopped small
    *2 tablespoons sweet relish
    *1 teaspoon salt
    *1 teaspoon pepper
    *1 teaspoon paprika
    *1 teaspoon celery seed
    *1 to 1 1/2 cups of mayonnaise.

    Directions:
    ~Place the potatoes in a large pot with enough water to cover.
    ~Bring to a boil and cook for about 20 - 30 minutes, or until tender.
    ~Drain, cool, cube and place in a large serving bowl.
    ~Mix eggs, celery, onions, relish, paprika, salt, pepper and celery seed.
    ~Add mayonnaise and mix well.
    ~Chill, covered, for about 2 hours before serving.

    Variations:
    `Use Red Skinned potatoes and don't peel.
    `Substitute Sweet Relish for Dill Relish.
    `Use half mayonnaise and half sour cream.
    `If you really don't like mayonnaise, try Miracle Whip although it will totally change the taste.
