Shake & Bake for Chicken or Pork

 This recipe is so easy to make and so much better than the store bought shake & bake.   It has far less sodium in it.   It keeps for 2-3 months.


SHAKE & BAKE

(makes 1 quart / 8-10 pieces of chicken)

Ingredients:

*1 cup all purpose flour (or whole wheat flour)

*2 cups bread fine bread crumbs (or fine whole wheat) (I use Italian)

*2 teaspoons corn starch 

*2 teaspoon paprika

*2 teaspoons onion powder

*2 teaspoon garlic powder

*2 teaspoon salt

*2 teaspoons sugar

*3 1/2 teaspoons poultry seasoning

*2 tablespoons dried parsley, crumbled (I use a meat mallet and gently pound it)

*1/4 cup vegetable oil or canola oil

Directions:

~In a large bowl, whisk tougher everything but the oil.

~Drizzle in oil, and mix until well combined.  

~Store in a sealed container in the freezer or refrigerator (it will last longer in freezer).

Cooking Directions:

~Preheat oven to 400 degrees.

~Spray a cookie sheet with cooking spray.

~Moisten each piece of chicken with water or milk (I like to soak my chicken in milk for an hour or so, to make its more tender).

~Shake off any excess liquid.

~Coat chicken 1 piece at a time.

~Place on prepared pan.

~30 to 45 minutes or until the chicken is done (depending on how thick the chicken is)

Blackened Chicken Seasoning.

This seasoning is so good for grilling chicken or salmon.   Just store it in an airtight container.


BLACKENED CHICKEN SEASONING
(makes )

Ingredients:
*1 1/2 tablespoons paprika
*1/4-1 teaspoon cayenne pepper (depending on how spicy you like things)
*1 teaspoon dried thyme
*1 teaspoon dried oregano
*1 teaspoon dried basil
*2 teaspoons garlic powder
*1 tablespoon onion powder
*1 teaspoon salt
*1 teaspoon ground black pepper

Directions:
~In a small bowl, mis all of the ingredients.
~Store in an airtight container, in a cool dry place.

Garlic Spread Seasoning

Making your own garlic bread or bread sticks is so easy.   You can make the breads or buy it and add this spread to it.  This would also be good to sprinkle on hot buttered noodles.



GARLIC SREAD SEASONING

Ingredients:
*1/2 cup parmesan cheese (one of the few times I don't use fresh)
*2 teaspoons kosher salt
*2 tablespoons garlic powder
*2 teaspoons oregano
*2 teaspoons basil
*2 teaspoons marjoram
*2 teaspoons dried parsley
*1/4 teaspoon dried rosemary

Directions:
~Combine all the ingredients and store in a jar, in refrigerator.

Making Garlic Bread:
~Sprinkle on bread or bread sticks, or mix 2 tablespoons with 1/2 cup butter, and spread on Italian bread that has been cut in half lengthwise.  Wrap in aluminum foil and bake 375 degrees.

Taco Seasoning

Taco's is such an easy dinner to make. Making your own taco seasoning only makes it better. No MSG and great for a iodine free diet.


TACO SEASONING 
(serves 20)

Ingredients:
*2 tablespoons chili powder
*3/4 teaspoon garlic powder
*3/4 teaspoon onion powder
*1/2 teaspoon crushed red pepper flakes
*1/2 teaspoon dried oregano
*1 teaspoon paprika
*2 teaspoons ground cumin (use gluten free if needed)
*2 teaspoons sea salt (kosher salt if on a iodine free diet)
*2 teaspoons black pepper
*3 teaspoons cornstarch 

Directions:
~Mix all ingredients.
~Store in an airtight container

Directions for tacos:
~Cook 1 pound of beef or chicken, drain.
~Add 3 tablespoons of taco seasoning to meat.
~Add 2/3 cup water.
~Simmer for 10 minutes and serve.
