I have been married to a wonderful Christian man since 1976. The Lord has blessed us with two daughters and two sons. I consider each day the Lord gives me on the earth yet another chance to serve Him.

Super easy to make.   Great way to use veggies up before going bad.   Easy to change this to chili mac soup by using chili seasoning rather than taco seasoning.

      Spaghetti Sauce

Homemade spaghetti sauce has so much flavor and is so easy to make.  The best thing is you can make it ahead of time and fresh or can it.  You then have it ready anytime to you want it.

      SPAGHETTI SAUCE

      Ingredients:
      *2 teaspoons olive oil
      *1 medium onion, chopped
      *6 garlic cloves, minced
*2 (28 ounce) cans whole Italian peeled tomatoes (I use the tomatoes I can)
      *1 1/2 teaspoons salt
      *1/2 teaspoon black pepper
      *1 teaspoon granulated sugar
      *2 bay leafs
      *1 1/2 teaspoon dried oregano
      *1 teaspoon dried basil

      Directions:
~In a large saucepan over medium heat, sauté garlic and onion in the olive oil, until onion is translucent (careful not to burn the garlic).
~Stir in the rest of the ingredients.
~Reduce heat to low, cover and simmer for 2 - 3 hours or cook in slow cooker for 5-6 hours.
~If you like your spaghetti sauce smooth (my family does), use an immersion blender or blender to blend up the tomatoes.

      Slow Cooker Mac & Cheese

So easy to make, creamy & tasty.  Kids and adults seem to love this recipe.  You can throw the noodles in uncooked, just let it cook longer in the crockpot.  I prefer the noodles cooked ahead of time because they don't seem as mushy.

(forgetting to take a picture before people dove in = a messy picture)

      CROCKPOT MAC & CHEESE

      Ingredients:
*1 (16 ounce) box of macaroni, cooked & drained
*1 (8 ounce) velveeta cheese, cut into cubes.
*1 (16 ounce) bag shredded cheddar cheese
      *3 cups whole milk
*2 (12 ounce) cans evaporated milk
      *4 tablespoon butter, melted
      *1 teaspoon salt
      *1 teaspoon black pepper
      *1/2 teaspoon garlic powder
      *1 teaspoon hot sauce (optional)

      Directions:
~In a large bowl, mix everything but noodles together.
~Add in cooked noodles and mix well.
~Put mixture into slow cooker & cover.
~Cook for 3 hours, stirring once in a while if possible.

**You can cook this in the oven if you would prefer.  Spray a 9x13 inch pan with a cooking spray.  Add the mixed ingredients, cover with aluminum foil and bake at 350 for 1 hour.

      Variation:
`add small chunks of ham if desired.

I also make this in my instant pot on slow cooker mode.  So easy to make and it makes enough to share with all your friends.  I love the mix of chocolates in this recipe.  This is a great recipe to take to a party.  It goes a long way.

~After candy has been cooking for 1 1/2 hours stir the mixture with a wooden spoon until smooth.
      ~Turn off slow cooker/instant pot
~Drop by teaspoons into mini cupcake liners.
~Let candy cool completely before eating.

      Variations:
`I love substituting the dry roasted peanuts with  peanuts, but you can use any nut you would like.

      Slow Cooker Chicken Tacos

One day I was thinking about my friend Jenn.   She is an amazing mother of quads.   Because her life is busy, (whose wouldn't be with 4 little ones running around) she likes slow-cooker meals.  I decided to play around with a recipe that would be super easy to throw together and would taste wonderful.    My family really liked this, I hope she will too.  These are about 278 calories each if using the low-carb wraps (317 if using flour tortillas).

      SLOW  COOKER CHICKEN TACOS
      (serves 6)

      Ingredients:
*1 pound boneless, skinless chicken breasts
      *1 green pepper, chopped
      *1 red pepper, chopped
      *1 onion, chopped
      *2 garlic cloves, minced
      *1 1/2 cups chicken stock/broth
      *1 bay leaf
*1 ( ounce) packet of taco seasoning (I use mild)
      *2 tablespoon dried parsley flakes
      *1 teaspoon dried dill weed
      *1 teaspoon garlic powder
      *1 teaspoon onion powder
      *1/2 teaspoon dried basil
      *1/2 teaspoon black pepper
*6 tortilla wraps (if watching calories use a low-carb wrap)
*1 1/2 cups reduced fat cheddar cheese, shredded
      *1 tomato, chopped (optional)
      *lettuce, shredded (optional)
      *sour cream (optional)

      Directions:
~Add chicken stock, bay leaf, parsley flakes, dill weed, garlic powder, onion powder, basil & pepper to slow cooker, mix ingredients together.
      ~Add chicken.
~Add red pepper, green pepper, onion & garlic.
~Cover and cook on low for 7-8 hours or on high for 4-5 hours.
      ~Remove chicken and shred.
~Return chicken to pot and mix.
~Scoop some chicken mixture on tortilla, top with tomato, lettuce & sour cream.

      Rotisserie Chicken

This is so easy, so moist, and so good. I never buy it from the store anymore. The meat will fall off the bone, and the skin is nice and crispy. I use any left over meat for a pot pie, soup, or wraps.

      ROTISSERIE CHICKEN
      (serves 8)

      Ingredients:
      *2 teaspoon salt
      *1/2 teaspoon garlic powder
      *1 teaspoon onion powder
      *2 teaspoons paprika
      *1 teaspoon dried thyme
      *1/2 teaspoon cayenne pepper
      *1/2 teaspoon black pepper
      *1 teaspoon white pepper
      *2 tablespoons minced garlic
      *2 small onions, quartered
*2 (approx. 4 pound) whole chickens

      Directions:
~Mix together all spices, in a small bowl.
~Remove giblets from chicken. (discard or freeze until ready to make chicken stock)
      ~Rinse chicken inside and out.
      ~Pat dry with paper towel.
~Rub each chicken inside and out with spice mixture.
~Place 1 onion (quartered) & 1 tablespoon minced garlic into the cavity of each chicken.
~Place chickens into a zip-lock bag and refrigerate over night. (if you don't have a bag, double wrap it with plastic wrap.
      ~Preheat oven to 250 degrees.
~Place chickens in a roasting pan.
~Bake uncovered for 5 hours. (internal temp. 180 degrees) Check it in 4 1/2 if your oven cooks hot.
~Let the chickens stan for 10 minutes before carving them. This will help to keep them moist.

      Slow Cooker Directions:
~ I cut the seasoning in half (only because I can only fit one chicken into my slow cooker at a time).
~Place the chicken in the slow cooker after in sitting in the seasoning over night in the fridge.
~Cook on low for 7-8 hours or high for 6-7 hours.

Helpful Hint: If you aren't going to be home to put the chicken in the oven 5 hours before you are going to be home, use the delay timer on your oven that most ovens have.

If you have a small family, freeze the second chicken (raw), with the spices on and the onion & garlic in the cavity. When you are ready to use it, let it thaw and cook as directed.

      Instant Pot Directions:
~Follow recipe as directed above, minus the oven.
~Add 1 1/2 cups of chicken stock or water into the pan of instant pot.
~Place chicken(s) in instant pot, on rack.  I can fit two in my large pot, but only one in the smaller ones.
      ~Place lid on and seal.
~Pressure Cook for  40 minus and allow to natural release.
