CRISPY POTATO WEDGES
*4 large potatoes (I use Idaho)
*3-4 tablespoons olive oil (enough to coat the potatoes)
*1 teaspoon sea salt
*1 tablespoon paprika
*1 teaspoon chili powder
*1/2 teaspoon ground black pepper
*1/2 teaspoon garlic powder
*1 teaspoon Italian dried seasoning
*1/2 cup Parmigiano-Reggiano cheese, grated (optional)
~Preheat oven toa 425 degrees.
~Wash potatoes and cut into wedges. I cut them in half lengthwise and then cut each half into fourths.
~In a bowl, mix olive oil & seasonings together.
~Toss potatoes in the olive oil mixture, coat well and evenly.
~Place on cookie sheet.
~Bake for 15-20 minutes. Flip to other side and bake another 15-20 minutes.
~Sprinkle grated cheese and bake another 10 minutes.
Variation: (to add more heat to potatoes)
`Add 2 tablespoons hot sauce
`Add 1/4 teaspoon cayenne pepper
