(makes 2 sandwiches)
*1/3 cup mayonnaise
*2 1/2 tablespoons ketchup
*1/3 cup sweet pickle relish
*dash of salt
*dash of black pepper
*1/2 cup sauerkraut, drained well
*1 tablespoon butter
*4 slices ry bread
*8 slices deli sliced corned beef
*8 slices swiss cheese
*1/4 cup mayonnaise mixture
~In a small bowl, mix mayonnaise, ketchup, relish, salt & pepper.
~Cover and refrigerate for at least 1 hour (I make the dressing the night before).
~Heat sauerkraut up in microwave, just until warm.
~Lightly spread butter on one side of each slice of bread.
~Put one slice of cheese on non-buttered side of two slices of bread.
~Spread desired amount of mayonnaise mixture over cheese.
~Next add 2 slices corned beef on each sandwich.
~Add 1/4 cup sauerkraut on each sandwich.
~Add second slice of swiss cheese.
~Top with remaining slice of bread, butter side out.
~Grill sandwich over medium heat, until golden brown, flip and grill until golden brown on other side.
