Pulled BBQ Chicken Sandwich

This is a good meal for a busy day. Just throw in in the slow cooker and go do what you need to do. You will have a hot yummy dinner when you return. I posted two types of BBQ Sauce. One sweeter the other spicy.

 

PULLED BBQ CHICKEN 
(serves 6-8)

Ingredients:
*5 good-sized boneless, skinless, chicken breasts.
*1/2-1 cup chicken stock.

Sweet BBQ Sauce
*2 tablespoons butter, melted
*1/4 sweet onion, chopped very fine
*2 garlic cloves, minced
*2 cups ketchup
*2 cups tomato sauce
*1/2 cup brown sugar
*1 cup Italian red wine vinegar
*1/4 cup dark molasses
*4 teaspoons hickory-flavored liquid smoke
*1/4 teaspoon chili powder
*1 teaspoon paprika
*1/2 teaspoon celery seed
*1/4 teaspoon cinnamon
*1/2 - 1 teaspoon cayenne pepper (depending on how spicy you want it)
*1 teaspoon sea salt
*1 teaspoon pepper
*1 (6 ounce) can tomato paste (use an hour before you are going to serve it, if sauce needs to be thicken up)

Spicy BBQ Sauce
*2 cups apple cider vinegar
*6 ounces tomato sauce
*1 1/2 tablespoons sugar
*1 1/2 tablespoons olive oil
*1 1/2 tablespoons salt
*1 tablespoon steak sauce
*1 tablespoon Worcestershire sauce
*1/2 tablespoon hot pepper sauce.
*1/2 teaspoon cayenne pepper

Directions:
~Heat the chicken stock in a fry pan to a low simmer.
~Add chicken breasts to the stock.
~Cook chicken 2-3 minutes on each side.
~Remove chicken from pan and cool.
~In the crock pot, mix all ingredients, except chicken.
~Place chicken into crock pot.
~Cover, and cook 3 to 4 hours on high or 6-8 hours on low.
~Uncover, and if needed shred chicken.
~Scoop unto rolls and serve. 

Variation:
`Add slice of favorite cheese on top of Pulled BBQ sandwich, then cover with butter.
