A great change on the classic chocolate chip cookie. I love the crunch in it.
RICE KRISPIE CHOCOLATE CHIP COOKIES
(makes 2 1/2 dozen
Ingredients:
*1/2 cup butter softened
*1/2 cup granulated sugar
*1/2 cup light brown sugar
*1 large egg
*1 teaspoon vanilla extract
*2 cups all-purpose flour
*1/2 teaspoon baking powder
*1/4 teaspoon baking soda
*1/4 teaspoon salt
*1 cup chocolate chips (semi-sweet or milk chocolate)
*1 1/2 cups Krispie cereal
Directions:
~Preheat oven to 350 degrees.
~Line a cookie sheet with parchment paper or a silicone mat.
~In a large mixing bowl, cream together 1/2 cup softened butter, 1/2 cup granulated sugar, and 1/2 cup light brown sugar until creamy.
~Stir in 1 large egg and 1 teaspoon vanilla extract.
~In another bowl, sift 1 1/4 cups all-purpose flour, 1/2 teaspoon baking powder, and 1/4 teaspoons salt together.
~Stir in the dry ingredients into the wet ingredients until just combined.
~Fold in 1 1/4 cups chocolate chips and 1 cup Rice Krispie cereal until mixed in.
~Scoop dough onto cookie sheet about 2-inches apart and bake for 10-12 minutes or until the edges are a light golden brown.
~Remove from oven and allow to cool on baking sheet for 1 minute.
~Remove and place on cooling rack until completely cooled.
