Gingerdoodles

A little bit snickerdoodle and a little bit ginger snaps.  



GINGERDOODLES

(makes 2 1/2 dozen)


Ingredients:

*3/4 cup butter, softened

*1/2 cup granulated sugar

*3/4 cup brown sugar, packed

*1/4 cup molasses

*1 large egg, room tempeature 

*2 1/4 cup all-purpose flour

*1 tablespoon cornstarch

*2 teaspoons baking soda

*1 1/2 teaspoon ground cinnamon

*1/2 teaspoon salt

*1 teaspoon ground ginger

*1/4 teaspoon ground cloves

*1/4 teaspoon ground nutmeg

*1/2 cup cinnamon sugar  (topping)


Directions:

~Preheat oven to 350 degrees.

~In a large mixing bowl, cream 3/4 cup butter, 1/4 cup granulated sugar, and 3/4 cup brown sugar until well incorporated.

~Stir in 1/4 cup molasses and 1 large egg.

~Sift in 2 1/4 cups flour, 1 tablespoon cornstarch, 2 teaspoons baking powder, 1 1/2 teaspoon ground cinnamon, 1/2 teaspoon salt, 1 teaspoon ground ginger, 1/4 teaspoon ground cloves, and 1/4 teaspoon ground nutmeg.

~Add to butter mixture and stir until well incorporated.

~Add 1/2 cup cinnamon sugar in a bowl.

~Using a cooking scoop, scoop up cookie dough and roll into a ball.

~Roll the ball of dough into the cinnamon sugar.

~Place onto a cookie sheet.

~Bake for 10 minutes.

~Remove from oven and sprinkle a little more cinnamon sugar on top.
