A great twist on meatloaf. The caramelized onions taste so good in it.
FRENCH ONION MEATLOAF
Ingredients:
*2 tablespoons butter
*2 large yellow onions, sliced thin
*1 1/2 pounds ground beef
*1/4 cup beef stock
*1 cup breadcrumbs
*1/2 cup whole milk
*1/2 green bell pepper, chopped small
*1/2 red bell pepper, chopped small
*3 garlic cloves, minced
*1 large egg, beaten
*2 tablespoons Worcestershire sauce
*1 tablespoon dijon mustard
*1 teaspoon dried thyme
*1 teaspoon salt
*1 teaspoon ground black pepper
*1 1/2 cups gruyere cheese (or Swiss), shredded
Directions:
~Preheat oven to 375 degrees.
~Spay a loaf pan with cooking spray.
~In a large skillet, melt butter, and sauté 2 large thinly sliced onions until they are caramelized and a golden brown.
~Add in 1/4 cup beef stock, to deglaze the bottom of the pan. Continue cooking until liquid as absorbed.
~Set aside and allow to cool.
~In a large bowl, combine 1 1/2 pounds ground beef, 1 cup breadcrumbs, 1/2 cup whole milk, 1/2 chopped red bell pepper, 1/2 chopped green bell pepper, 3 garlic cloves, 1 large beaten egg, 2 tablespoons Worcestershire sauce, 1 tablespoon dijon mustard, 1 teaspoon dried thyme, 1 teaspoon salt, and 1 teaspoon ground black pepper and mix until well combined.
~Fold in caramelized onions and 1/2 cup shredded gruyere cheese.
~Shape mixture int a loaf and place in prepared loaf pan.
~Bake in preheated oven for 60-70 minutes or until internal temperature reaches 160 degrees.
~Sprinkle remaining 1 cup shredded gruyere cheese over top of meatloaf and bake for another 6-8 minutes or until the cheese is melted and Bubbly.
~Allow to set for 5-8 minutes before slicing.
