I love salads. Great for lunch or a side dish with dinner.
TOMATO AVOCADO SALAD
Ingredients:
*2 cups cherry tomatoes, halved
*1 avocado, chopped
*1 tablespoon olive oil
*1/4 cup red onion, diced
*1 teaspoon fresh squeezed lemon juice
*1 tablespoon balsamic vinegar
*1/2 teaspoon salt
*1/4 teaspoon black pepper
Directions:
~Combine all the ingredients in a small bowl & toss together.
~Let stand for 15-20 minutes before serving.
Variation:
~Substitute cherry tomatoes with 2 tomatoes, diced.
