Key Lime Pound Cake

This is good just as it is or to use for strawberry shortcake.  It's dense, moist & very flavorful.


KEY LIME POUND CAKE
(serves 8)

Ingredients:
*1 1/2 cups all-prupose flour
*1/8 teaspoon baking soda
*1/4 teaspoon salt
*1/2 cup butter, softened
*1 1/2 cups white sugar
*3 large eggs
*2 tablespoons key lime juice
*1 teaspoon pure vanilla extract
*1/2 cup buttermilk

Directions:
~Preheat oven to 325 degrees.
~Grease one loaf pan (bread pan).
~In a large mixing bowl, cream butter & sugar together.
~Mix in one egg at a time, beating well after each egg.
~Stir in lemon & vanilla extracts.
~Mix in flour & buttermilk.
~Pour cake batter into prepared pan.
~Bake for 80-90 minutes (cake will begin to pull away from the pan when done).
~Remove from oven, and let cool for 10 minutes.
~Remove from pan & let cool on a wire rack.
