Chicken Sausage & Pasta

Yummy!   Simple & quick to make.  Low in calories, around 280 calories.   Tastes wonderful.  Very filling.  What's not to like about this dinner?


CHICKEN SAUSAGE & PASTA
(serves 4)

Ingredients:
*6 ounces chicken sausage, removed from casing
*1 medium yellow onion, chopped
*1/2 red bell pepper, chopped
*1/2 green bell pepper, chopped
*4 garlic cloves, minced
*5 ounces chopped frozen spinach, thawed
*1 medium tomato, chopped
*1 teaspoon olive oil
*3 tablespoons, fresh grated parmesan cheese
*1 1/2 cups chicken stock
*1 teaspoon dried basil leaves
*1 teaspoon dried oregano

Directions:
~Bring a large pot of salted water to a boil.
~Add pasta and cook for 10 minutes, or until al dente.
~Drain pasta and set aside.
~In a large skillet, heat olive oil, onions, green & red pepper and sausage, until sausage is no longer pink & veggies are soft.
~Add garlic, chopped tomato, chicken broth more minutes.
~Add chopped tomato, chicken broth, basil leaves & oregano, and cook for 5 more minutes, over medium heat.
~Add chopped spinach, cover and simmer for about 10 minutes.
~Add cooked pasta to mixture.
~Sprinkle with parmesan cheese & enjoy.
