Marinara Sauce

Very easy to make, and is better than anything you'll buy in the store.  Make several batches at one time and freeze or can it.  Then you will have it ready whenever you want it.



MARINARA SAUCE


Ingredients:
*1/2 cup olive oil
*8-10 garlic cloves, minced
*1 yellow onion, chopped small
*1 large carrot, finely grated
*2 (28 ounce) cans tomato sauce (I make my own or use San Marzano)
*1 1/2 teaspoons salt
*1 teaspoon ground black pepper 
*2 large bay leaves
*1/2 cup fresh basil, chopped (or 1 1/2 teaspoons dried basil)
*1/2 cup fresh flat leaf parsley, chopped (or 2 tablespoons dried parsley)
*1 tablespoon sugar (optional)
*1/2 cup white wine (or chicken stock with a small squeeze of lemon juice)


Directions:
~In a large skillet, heat up olive oil.
~Add onions, carrots and garlic.
~Sauté for 4-5 minutes, or until onion is translucent, stir often (careful not to let the garlic burn).
~Add tomatoes, salt, pepper, bay leafs and wine.
~Simmer for 1 hour.
~Add basil and parsley, and sugar
~Simmer for at least 2 hours.

Can I use canned whole tomatoes if I don't have stewed tomatoes?

Yes you can. Just chop them up.
