Salisbury Steak Burgers.

 These are good even without the bun.   Goes great with mashed potatoes or French fries.   




SALISBURY STEAK BURGERS

(makes 4   1/4 pound burgers)


Burger Ingredients:

*1 pound ground beef

*1/2  medium yellow onion, grated

*1/2 cup panko bread crumbs

*1 large egg

*1 tablespoon dijon mustard 

*2 tablespoons ketchup

*1/2 teaspoon Worcestershire sauce 

*2 garlic cloves, minced

*1 beef bouillon cube

*4 pretzel hamburger buns (or your favorite hamburger bun)

*4 slices of provolone cheese or Swiss (or your favorite)

Gravy Ingredients:

*1/2 medium yellow onion, chopped

*2 garlic cloves, minced

*1 (8 ounce) package mushrooms, sliced

*2 tablespoons butter

*3 tablespoons all-purpose flour

*2 cups beef stock

*2 teaspoons Worcestershire sauce 

*1/4 teaspoon salt

*1/2 teaspoon ground black pepper


Burger Directions:

~In a large bowl, mix 1/2 grated onion and 1/2 cup panko bread crumbs.

~Add 1 pound ground beef, 1 large egg, 1 tablespoon dijon mustard, 2 tablespoons ketchup, 1/2 teaspoon Worcestershire sauce, 2 minced garlic cloves, and 1 beef bouillon cube (broke up).

~Mix until well incorporated.

~Divide into 4 sections, and form into patties.

~Heat up a heavy bottom skillet over medium heat.

~Sear patties on both sides (about 2-3 minutes preside).

~Remove from pan and set aside.

Gravy Directions:

~Add 1/2 chopped yellow onions to the same skillet and sauté for about 3-4 minutes, stirring often.

~Add 2 minced garlic cloves and cook for another 30 seconds, stirring constantly.

~Add (8 ounce) packages sliced mushrooms, cook until soft and tender, slightly browned.

~Stir in 2 tablespoons butter and allow to melt.

~Stir in 3 tablespoons all-purpose flour and cook for 1 minute, stirring continuously.

~Slowly pour in 2 cups beef stock, whisking as you do.

~Stir in 1/4 teaspoon salt and 1/2 teaspoon ground black pepper.

~Bring up to a simmer.

~Add in hamburger patties.

~Allow to simmer in gravy until gravy thickens and patties are cooked through.

~Grill the inside of you bun.

~Place a slice of cheese on each bottom bun.

~Place patties over cheese and add the top bun.

~Serve with some of the gravy on the side to dip the burger in and fries in.

French Dip Cheeseburger

 I woke up in the middle of the night and thought I bet a French Dip Cheeseburger would be so good.  I've never heard of one, but I made it anyways.  It was so good.





FRENCH DIP CHEESEBURGER

(makes 4)


Burger Ingredients:

*1 pound ground beef

*1/2 teaspoon salt

*1/2 teaspoon ground black pepper

*1/2 teaspoon garlic powder

*4 slices Swiss cheese

*4 slices havarti cheese

*4 hamburger buns (brioche, pretzel, or potato buns work best for dipping).

Grilled Onion Ingredients:

*1 large sweet onion

*1 tablespoon butter

*1/8 teaspoon salt

Sauce Ingredients: (optional)

*1/2 cup mayonnaise (or plain greek yogurt)

*1/2 cup sour cream 

*1-2 tablespoons horseradish 

*1/2 teaspoon Worcestershire sauce 

*1 teaspoon dried chives or 2 tablespoons of green onion tops, chopped)

French Dip Ingredients:

*2 cups beef stock

*1-2 teaspoons dried thyme

*1/8 teaspoon salt

*1/8 teaspoon ground black pepper

*1 teaspoon Worcestershire sauce



Sauce Directions: (I like to make this at least one hour before using)

~In a small bowl, whisk 1/2 cup mayo (or plain greek yogurt), 1/2 cup sour cream, 1-2 tablespoons horseradish, 1/2 teaspoon Worcestershire sauce,  and 1 teaspoon dried chives or 2 tablespoons chopped green onion tops until well combined.

~Cover and refrigerate for at least 1 hour.

Grilled Onion Directions:

~Melt 1 tablespoon butter into a large frying pan.

~Add in 1 large sliced sweet onion, and cook for 3-4 minutes.

~Sprinkle 1/8 teaspoon salt over onions.

~Continue cooking until onions are caramelized (a golden brown).

~Remove from frying pan and set aside.

French Dip Ingredients:

~In a medium saucepan, heat up 2 cups beets stock, 1-2 teaspoons dried thyme, 1/8 teaspoon salt, 1/8 teaspoon ground black pepper, and 1 teaspoon Worcestershire sauce over medium heat until it reaches a light boil. I like to add a couple garlic cloves to mine while it's heating up.  I remove them when serving.

~Reduce heat and allow to simmer for at least 10 minutes (this is the time to cook the burgers)

Burger Directions:

~Toast insides of buns and set aside (optional).

~Form 4 patties from 1 pound ground beef.

~In a small bowl, mix 1/2 teaspoon salt, 1/2 teaspoon ground black pepper, and 1/2 teaspoon garlic powder.

~Sprinkle evenly over both sides of patties.

~Grill or fry patties until desired doneness (I do about 4-5 minutes per side).

~Place a slice of Swiss cheese and a slice of havarti cheese over each burger.

~Once cheese has melted, place on grilled bottom hamburger bun.

~Spread some sauce over top bun and place on top of burger.

~Pour French Dip (au jus) into 4 small bowls.

~Dip burgers into sauce and enjoy.

Chopped Cheese Hoagie

 I guess these are popular in New York.   I must admit it was pretty tasty.  




CHOPPED CHEESE HOAGIE

(makes 3)


Ingredients:

*1 teaspoon butter

*3 hoagie rolls

*1 pound ground beef

*1 teaspoon olive oil 

*1 small yellow onion, chopped small

*1 medium tomato, sliced thin

*1/2 teaspoon salt

*1/2 teaspoon ground black pepper

*1 sazon goya seasoning packet (or make your own 1/4 teaspoon salt, 1/4 teaspoon garlic powder, pinch of coriander, and a  pinch of cumin)

*6 slices American cheese

*Shredded lettuce

*ketchup

*mayo


Directions:

~Chop 1 medium yellow onion and set aside.

~Slice 1 medium tomato thin and set aside.

~Shredded lettuce and set aside.

~In a large skillet over medium heat-high heat.

~Once skillet is hot add 1 teaspoon olive oil

~Add 1 pound ground beef and smash it down (like a smash burger) and allow it to cook until ground beef until it forms a crust.

~Season non cooked side of ground beef evenly with 1/2 teaspoon salt, 1/2 teaspoon pepper, and 1 packet sazon goya seasoning.

~Once the ground beef has become crust, flip it and start to break it up as it cooks and add 1 chopped onion.

~Once ground beef is cooked through and onions are tender, turn off heat.

~Add 6 slices American cheese evenly over cooked ground beef.

~Cover with lid until cheese melts.

~While the cheese is melting, heat up another large skillet over medium heat.

~Once hot add, 1 teaspoon butter.

~Toast both sides and inside of hoagie roll and set aside.

~Stir cheese in ground beef.

~Spread mayonnaise on both sides (inside) of toasted bun.

~Squeezed some ketchup over mayonnaise.

~Add some shredded lettuce on one side of bun.

~Add seasoned thinly sliced tomato over lettuce.

~Add meat mixture over the other side of the hoagie roll.

~Drizzle a small amount of ketchup over meat.

~Close hoagie roll.

~Wrap hoagie roll tightly in parchment paper or waxed paper.

~Allow to rest for 2 minutes.

Italian Burger

 Oh my, this is delicious.  I was a little skeptical about the marinara jam, but it works great on this burger.  You could however just add some marinara sauce and it would still be awesome.


ITALIAN BURGER

(serves 4)


Marinara Jam Ingredients:

*1 (15 ounce) can crushed tomatoes

*1 teaspoon dried oregano

*1/4 teaspoon dried basil

*1/4 teaspoon red pepper flakes

*2 garlic cloves, minced

*1 tablespoon olive oil 

*1 teaspoon salt

*1 teaspoon ground black pepper

*1/2 cup granulated sugar

Burger Ingredients & Toppings:

*1/2 cup pesto sauce 

*4 hamburger buns, toasted

*4 slices prosciutto

*1 pound ground beef, divided into 4 (4 ounce) patties

*salt & pepper to taste

*lettuce (enough for 4 burgers)

*1 ball burrata cheese (or fresh mozzarella)

*12 hamburger dills (optional)


Marinara Jam Directions:

~In a small saucepan, add 1 (15 ounce) can crushed tomatoes, 1 teaspoon dried oregano, 1/4 teaspoons dried basil, 1/4 teaspoon red pepper flakes, 2 minced garlic cloves, 1 tablespoon olive oil, 1 teaspoon salt, 1 teaspoon ground black pepper, and 1/2 cup granulated sugar.

~Bring to a boil, stirring often.

~Once boiling, tun dow to a simmer and cover. 

~Simmer for 25-30 minutes or until mixture thickens (will get thicker as it cools).

~Remove from heat and set aside to cool.

Burger Directions:

~Cut up 4 slices of prosciutto and fry in a skillet until crispy.

~Remove from heat and set on a paper towel to soak up any excess grease.

~From 1 pound ground beef into 4 (4 ounce) patties.

~Season with salt & pepper.

~Grill or fry patties over medium-high heat to desired doneness (I cook mine 4-5 minutes per side).

~Toast buns to a golden brown.

~Spread desired amount of pesto sauce on the top and bottom bun.

~Place some lettuce over top pesto sauce on the bottom bun.

~Place a hamburger patty over top of lettuce.

~Place desired amount of marinara jam over hamburger patty.

~Top with some burrata and prosciutto.

~Place top bun on and enjoy.

Olive Burger

 I am the only one in the house who likes olives.   This burger is so good.



OLIVE BURGER

(serves 4)


Olive Sauce Ingredients:

*1 cup mayonnaise 

*1/4 cup sour cream

*1 tablespoon onion, finely chopped 

*10 green olives, finely chopped

*pepper to taste

Burger Ingredients:

*1 pound ground beef

*4 slices white American cheese  or pepper jack cheese (or your favorite) 

*salt & pepper to taste

Topping Ingredients:

*dill pickle slices

*shredded lettuce

*yellow onion, sliced thin

*tomato, sliced thin


Olive Sauce Directions:

~In a small bowl, whisk 1 cup mayonnaise, 1/4 cup sour cream, 1 tablespoon finely chopped onion,  10 finely chopped green olives, and pepper to taste until well incorporated.

~Cover and refrigerate for at least 1 hour.

Burger Directions:

~Divide 1 pound ground beef into 4 equal patties (1/4 pound each).

~Heat a frying pan or grill up over medium heat.

~Grill 4 hamburger buns until a golden brown and the set aside.

~Cook burgers until desired doneness.

~Add 1 slice American cheese over each burger.

~Spread desired amount of olive sauce over top bun.

~Put some shredded lettuce over bottom bun.

~Place burger over lettuce.

~Add desired toppings over burger and then place top bun over it.

Hawaiian BBQ Burger

 You can use canned pineapple rings, but fresh is so much better.  



HAWAIIAN BBQ BURGERS

(makes 4)


Ingredients:

*1 pound ground beef

*4 hamburger buns

*4 slices of American cheese (or your favorite cheese)

*salt & pepper to taste 

*4 slices fresh pineapple

*1/4 cup BBQ sauce

Topping Ingredients:

*Shredded lettuce (optional)

*red onion, thinly sliced (optional)

*sliced tomato


Directions:

~Divide 1 pound ground beef, divided into 4 equal parts and form into a patty (1/4 pound each).

~Heat up a frying pan over medium heat-high (or use grill).

~Drizzle a small amount of olive oil in hot frying pan.

~Open 4 hamburger buns and toast until golden brown and then set aside..

~Place 4 pineapple rings into frying pan (or grill) and fry until a light golden brown appears on it, flip and cook the other side (about 30-60 seconds per side) and set aside.

~Fry (grill) burger to desired doneness.

~Once burgers have been flipped brush some BBQ sauce over it (just a small amount).

~When burger is almost done, add a slice of cheese over each burger.

~Spread BBQ sauce over top toasted bun.

~Add some shredded lettuce on th bottom bun.

~Add burger, then the pineapple slice, and top with whatever toppings you like.

~Add the top bun and enjoy.

Shepherd Pie Burger

 Another great way to use up leftover mashed potatoes.   Good with or with a bun.

SHEPHERD PIE BURGER (British Pub Burger)

(makes 4 burgers)


Sauce Ingredients:

*1 tablespoon butter

*1 medium carrot, peeled and finely chopped

*1 celery stalk, finely chopped

*1/2 medium onion, finely chopped

*1/2 cup mushrooms, finely chopped (optional)

*1 1/2 cups beef broth

*2 tablespoons tomato paste

*2 splashes Worcestershire Sauce

*1/2 teaspoon ground black pepper

*2 tablespoons butter

*2 tablespoons all-purpose flour

Topping Ingredients:

*1 cup mayonnaise 

*1/4 cup peas, cooked and cooled

*1 garlic clove, minced

*2 cups white or yellow cheddar cheese (or your favorite cheese)

*2 cups mashed potatoes 

*4 hamburger buns

Burger Ingredients:

*1-2 pounds ground beef (depending on how big you want your burger


Sauce Directions:

~In a medium skillet, over medium heat melt 1 tablespoon butter.

~Add in veggies and cook until softened.

~Stir in tomato paste, Worcestershire sauce, and pepper until well combined.

~Move veggies to sides of skillet.

~Melt 2 tablespoons butter in the center of the skillet.

~Stir in flour and cook for 1 minute, stirring continuously.

~Now stir veggies into flour mixture.

~Stir in beef broth.

~Bring to a boil.

~Reduce heat to a simmer and simmer until most of the liquid is gone.

~Remove from heat and set aside.

Topping Directions:

~Using a blender or immersible blender, blend the mayo, peas and garlic until smooth.

~Pour into a small container, cover and refrigerate until ready to use (I like to do this at least 1 hour before using).

Burger Directions:

~Divide ground beef into 4 equal sections, and form into patties.

~Season burger with salt & pepper.

~Heat up skillet, or griddle to medium high.

~Lightly brush vegetable oil over surface.

~Cook 3-6 minutes per side, to desired doneness.

~Divide mashed potatoes into 4 equal parts.

~Form a patty with the mashed potatoes and place on grill.

~Grill until golden brown and flip until the other side is a golden brown.

~Place 1/2 cup of shredded  cheese on skillet or griddle in a circle.

~Allow one side to brown and then place on top of burger 

~Toast the inside of the hamburger buns on grill (optional).

Put The Burger Together:

~Place toasted bun on a plate.

~Place the cooked burger over bottom bun.

~Spread some veggie mixture over the burger.

~Add grilled potato over the veggie mixture.

~Add the toasted cheese over the toasted potato toasted side down.

~Add some mayo sauce on the top bun.

~Place top bun over top and enjoy.

Pork Burgers

I use my blender to ground up bacon to add to the ground pork.  It adds so much flavor.  If you can't grind up the bacon, then substitute with olive oil to add some fat to the burger.




PORK BURGERS

(makes 4-6)

Sauce (or use BBQ sauce)

*1/4 cup mayonnaise

*1/4 cup sour cream

*1 teaspoon Worcestershire sauce

*1 teaspoon dijon mustard

*1 teaspoon minced garlic

*1 tablespoon fresh dill minced (1 teaspoon dried)

*1/2 teaspoon salt

*1 teaspoon ground black pepper

*1 teaspoon olive oil or vegetable oil

Burger Ingredients:

*1 pound ground pork

*1/2 teaspoon salt

*1 teaspoon ground black pepper

*1/2 teaspoon Worcestershire sauce 

*1/2 teaspoon onion powder

*1 teaspoon garlic powder

*1 tablespoon dry BBQ rub

*1 large egg yolk

*1/2 pound of bacon ground up in a blender (or use 2 teaspoons olive oil)

*1/4 cup panko bread crumbs

*2 hamburger buns (I like to toast them)

*2 slices pineapple rings (optional) (I like to grill mine)

*Shredded lettuce

*tomato sliced (I do this if I"m not using the pineapple)

*3 slices your favorite cheese (optional)


Sauce Directions:

~In a small bowl, whisk all of the sauce ingredients until well blended.

~Cover the bowl with plastic wrap and refrigerate for at least 4 hours.

Burger Directions:

~Line a cookie sheet with parchment paper.

~In a large bowl, mix all the burger ingredients and mix until well combined.

~Divide the mixture into three equals portions.

~Shape dough into balls and then flatten into a patty.

~Heat up a large skillet over medium heat.

~Drizzle a little olive oil over pan once it's hot.

~Cook patties for about 4-5 minutes per side or until the internal temperature is 160 degrees.

~Place a slice of cheese on patty a few seconds before removing it from pan.

~Place on bun and top with desired toppings.

~Spread some of the Sauce or BBQ sauce over inside of top bun.

    Smash Burger Tostada

    Put whatever you want to go on this burger.  My favorites are, Guacamole, Pico De Gallo, sour cream, and shredded lettuce.   It makes for one sloppy burger, but boy it it good.   You can also spread a little refried beans to the tortilla before putting it on the burger (I don't because I don't like beans of any kind).  If you want to make tacos use larger tortillas.  




    SMASH BURGER TOSTADA

    (makes 4)


    Ingredients:

    *1 pound ground beef (I use 20/80)

    *1/2 teaspoon chili powder

    *1/2 teaspoon cumin

    *1/2 teaspoon paprika

    *1/4 teaspoon onion powder

    *1/2 teaspoon garlic powder

    *1/2 teaspoon oregano 

    *1 teaspoon ground black pepper

    *1 teaspoon salt

    *4 small tortilla (flour, corn, or carb free)

    Toppings (all optional)

    *shredded Mexican blend cheese or Mexican melting cheese (I use Oaxaca)

    *Jalapeño pepper, sliced thin 

    *refried beans

    *shredded lettuce

    *guacamole

    *pico de gallo or salsa

    *Sour cream


    Directions:

    ~In a medium bowl, add ground beef, chili powder, cumin, paprika, onion powder, garlic powder, oregano, pepper, and salt.

    ~Mix until seasons are mixed in (do not over mix).

    ~Divide meat into quarters and from into balls.

    ~Heat up a skillet.

    ~Once skillet is hot, add ground beef.

    ~Let cook for 1 minute.

    ~Place tortilla over top of meat and push down with a spatula to flatten burger as thin as possible (if you are going to use refried beans, spread it on the tortilla and place on burger bean side down).

    ~Remove the tortilla and set aside.

    ~Cook for about 2-4 minutes.

    ~Flip and place tortilla back on burger.

    ~Cook for another 2-4 minutes.  

    ~Flip tortilla side down and cook for one minute.

    ~Top with desired toppings and enjoy.

    Hawaiian Cheeseburger

     I like to add candied jalapeño peppers to mine.   I add a slice of grilled spam to my husbands (I do not eat spam).  The grilled pineapple makes this burger awesome.  I make my own teriyaki sauce and buns.  Homemade buns are so good.

    HAWAIIAN CHEESEBURGER 

    (makes 4)


    Ingredients:

    *2 pounds ground beef (20/80 is best)

    *1 teaspoon salt

    *1 teaspoon ground black pepper

    *4 slices Swiss cheese

    *4 slices fresh pineapple

    *4 thin slices spam (optional)

    *1-2 tablespoons Teriyaki Sauce (your favorite)

    *1 tablespoon Teriyaki sauce

    *2 tablespoons BBQ Sauce (your favorite)

    *small red onion, sliced thin

    *lettuce (your favorite.  I use romaine)

    *candied jalapeño peppers (optional)

    *4-8 tablespoons Mayo

    *4 hamburger buns (you could also use Hawaiian sweet rolls)


    Directions:

    ~Mix 2 tablespoons BBQ sauce and 1 tablespoon of teriyaki sauce together and set aside.

    ~Heat up cast-iron pan or griddle over medium heat (or use a grill).

    ~Divide the ground beef into 4 patties.

    ~Season both sides with salt and pepper.

    ~Place burgers on griddle and cook for 4-7 minutes per side (depending on the thickness of the burger and desired doneness of burger).

    ~Slice spam into 4 1/2-inch slices.

    ~Place spam on griddle and brown both sides (about 3-5 minutes each side)

    ~Once spam is browned on both sides, spread some teriyaki sauce on one side and grill for 30-40 seconds.  

    ~Spread some teriyaki sauce over other side and spam and grill for 30-40 seconds.

    ~Remove from grill.

    ~Place pineapple slices on grill and grill about 5-6 minutes per side (until pineapple is heated through).

    ~Place a slice of Swiss cheese on each burger once they are cooked enough.

    ~Toast insides of buns on grill.

    ~Remove everything from grill.

    ~Spread desired amount of mayo on the bottom bun.

    ~Place burger on bottom bun.

    ~Add cooked spam on top of burger.

    ~Place grilled pineapple over spam.

    ~Add lettuce, red onion, tomato and candied jalapeño.

    ~Drizzle desired amount of teriyaki sauce and bbq mixture over top.

    ~Place top bun on and enjoy.

    Mexican Street Burgers

     You can make this spicy or leave out the spices.   I do both, because some of my family likes spice and some do not.  I have different toppings that would be awesome on this burger.  Just choose your favorite or mixed a couple.  I like the cilantro mayo and fresh salsa on mine.



    MEXICAN STREET BURGERS

    (serves 4)


    Cilantro Mayo Ingredients:

    *1/2 cup mayo

    *1/2 garlic bulb, roasted and chopped and made into a paste

    *1/4 cup fresh cilantro, chopped fine

    *roasted small jalapeño pepper, chopped small (I remove the seeds and only use a small amount)

    Salsa Ingredients:

    *1 small tomato chopped

    *2 tablespoons chopped white onion

    *2 tablespoon chopped fresh cilantro

    *1 teaspoon ground black pepper

    *1/2 teaspoon salt

    *1/2 tablespoon lime juice

    Burger Ingredients:

    *1 1/2 pounds ground beef 

    *1 teaspoon Worcestershire sauce 

    *1 teaspoon salt

    *1 teaspoon ground black pepper 

    *2 teaspoons taco seasoning

    *4 hamburger buns (I make my own hamburger buns)

    *4 slices pepper jack cheese

    *4 slices ham (optional)

    *lettuce (whatever type you prefer)

    *small red onion, sliced

    *salsa (whatever is your favorite.  I make my own salsa)


    Cilantro Mayo Directions:

    ~In a small bowl, mix all ingredients.

    ~Cover and refrigerate for at least 1 hour (I make mine the night before or int the morning).

    Salsa Ingredients:

    ~In a small bowl, mix all the ingredients together.

    ~Cover and refrigerate for at least 1 hour.

    Burger Ingredients:

    ~Mix ground beef, Worcestershire sauce, salt, pepper, and taco seasoning together.

    ~Form into two patties (Make them thin or thick, whatever you prefer).

    ~Grill burgers to desired doneness.

    ~Place cheese on burgers and allow to melt a little bit.

    ~Durning the last few minutes of cooking the burger toast the inside of the buns (optional).

    ~Also during the last few minutes of the burgers cooking heat up the ham on the grill.

    ~Spread a little cilantro mayo over bottom of bun.

    ~Place the ham on bottom bun.

    ~Place burger over ham.

    ~Top burger with onion, lettuce and salsa.

    ~Spread some cilantro mayo on toasted side of top bun.

    ~Place top bun on burger and enjoy.

    Extra Burger Toppings:

    Mexican Street Corn 

    *4 large ears of corn, grilled and kernels cut from cob (or 3 cups of frozen corn kernels, thawed)

    *2 tablespoons mayo

    *3 tablespoons sour cream

    *1/2 tablespoon olive oil

    *zest from 1/2 lime

    *juice from 1/2 lime

    *2 teaspoons chili powder

    *1/2 teaspoon kosher salt

    *1/4 teaspoons ground black pepper

    *2 teaspoons dried cilantro (or 1/4 cup fresh, chopped small

    Directions:

    ~Mix all the ingredients together until well incorporated.

    ~Cover and refrigerate for at least 1 hour for best taste.


    Guacamole Topping:

    *1 ripe avocado, peeled and diced small

    *2 small tomatoes, diced small

    *1/4 cup red onion, chopped small

    *1/2-1 teaspoons garlic, minced

    *1 teaspoon lime juice

    *1/2 teaspoon salt

    *1/4 teaspoon ground black pepper

    Directions:

    ~Mx all the ingredients until well blended.


    Bean Salsa

    *1 medium tomato, diced small

    *1/2  medium red onion, chopped small

    *1 1/2 cups red kidney beans, rinsed and drained

    *1/2 cup fresh coriander, chopped

    *2 tablespoons olive oil

    *zest from 1/2 lemon

    *juice from 1/2 lemon

    Directions:

    ~Mix all the ingredients until well mixed.


    Mexican Coleslaw:

    *2 carrots, peeled and shredded 

    *half of cabbage, shredded

    *4 green onions chopped (including the greens)

    *1 clove garlic, minced

    *1/4-1/2 cup fresh cilantro, chopped

    *1/4 cup apple cider vinegar

    *2 tablespoons olive oil

    *1 teaspoon dried cumin

    *1 teaspoon dried oregano

    *zest from one lime

    *juice from one line

    *1/2 cup sour cream

    Directions:

    ~In a large bowl, whisk minced garlic, cilantro, apple cider vinegar, olive oil, cumin oregano, lime zest, lime juice, and sour cream together.

    ~Add in cabbage, carrots, and red onion and mix until well coated.

    ~Refrigerate for at least 1 hour for best taste.

      Salmon Burger

       I am not a big salmon person, but I do like these burgers.   I really love add some Candied Jalapeño Peppers on top.




      SALMON BURGERS

      (makes 4)


      Ingredients:

      *1 pound US Atlantic or Alaskan Salmon, remove skin

      *2 green onions with greens

      *1/4 cup red bell pepper

      *1 garlic clove

      *2-4 tablespoons chopped fresh dill (or 1 teaspoon dried dill)

      *2 tablespoon dijon mustard

      *1 tablespoon mayonnaise

      *1/2 teaspoon lemon zest

      *1 tablespoon freshly squeezed lemon juice

      *1 1/4 cup panko crumbs

      *1/2 teaspoon salt

      *1/2 ground black pepper

      *2 tablespoons olive oil

      *4 hamburger buns

      Sauce:

      *1/2 cup mayonnaise 

      *juice squeezed from a half of medium sized lemon

      *2 tablespoons chopped fresh dill

      *1/2 teaspoon salt

      1/2 teaspoon ground black pepper

      *Pinch or two red pepper flakes 


      Directions:

      ~Remove skin from salmon.

      ~In a food processor,  puree onions, red peppers, and garlic.

      ~Add salmon, dill, lemon zest, lemon juice, salt,  and pepper and process until salmon is ground.

      ~Stir in panko crumbs until just mixed.

      ~Line a plate or pan with parchment paper.

      ~Form mixture into 4 patties, abut 3/4 inch thick.

      ~Cover with plastic wrap and refrigerate for at least 1 hour.

      ~Heat up a cast iron pan (or heavy bottom pan) over medium heat.

      ~Drizzle with olive oil.

      ~Once pan is hot, add salmon patties.

      ~Cook for 4-5 minutes per side.

      ~Remove from heat and place on bun.

      ~Add sauce on top bun or over salmon.

      ~Top with desired toppings.

      Black and Bleu Burger

       One of my favorite burgers.   I like to put some garlic aioli sauce over the burger.  So good.



      BLACK AND BLUE BURGER

      (makes 4)


      Burger Ingredients:

      *4 hamburger buns (I like to use homemade,  brioche, pretzels buns or everything buns)

      *1 pound ground beef (I use 80/20)

      *3 ounces bleu cheese crumbles

      *4 ounces mushrooms, sliced

      *1/2 small yellow onion, sliced thin

      *1 tablespoon butter

      Blacking Ingredients:

      *2 teaspoons dried oregano 

      *1/4-1/2 teaspoon red pepper flakes 

      *1/2 teaspoon ground black pepper

      *1 teaspoon salt

      *1/2 teaspoon onion powder

      *1/2 teaspoon garlic powder

      *1/2 paprika 

      Topping Ingredients:

      *8 slices bacon, cooked crisp

      *1/2 small red onion, sliced thin

      *lettuce, shredded 

      *tomato, sliced thin

      *4 slices of your favorite cheese (i use American, cheddar, or pepperjack)

      *garlic aioli or bleu cheese dressing (optional)


      Directions:

      ~In a small bowl, whisk seasoning ingredients together.

      ~Mix ground beef and  blue cheese crumbles together (do not over mix).

      ~Divide ground beef into 4 patties.

      ~Season both sides of burger with blackening seasoning.

      ~Lightly rub seasoning mix into burgers.

      ~Place burgers on a plate, cover and refrigerate for 15 minutes.

      ~In a small skillet, melt butter and add mushrooms and onions.

      ~Cook until mushrooms are browned and onions are caramelized

      ~Cook burgers over medium-high heat in a skillet, the oven or a grill, to desired doneness.

      ~Toast the insides of the buns (optional)

      ~Just before removing the burger, place a piece of cheese over burger.  Cook long enough for it to melt.

      ~Spread some aioli sauce or bleu cheese dressing over top bun.

      ~Place desired toppings over burger and place the top bun on.

      Oklahoma Fried Onion Cheeseburgers

       I love the grilled onions cooked with this burger.   Traditional Oklahoma onion burgers normally have pickles and onions on them, but put your favorite toppings on them.   Pickles and onions happen to be my favorite burger toppings.


      OKLAHOMA FRIED ONION CHEESEBURGERS

      (serves 4)


      Ingredients:

      *1 large onion, peeled, halved and very thinly sliced (paper thin)

      *1/2 teaspoon salt

      *1 pound ground beef (80-20 is best)

      *salt and pepper to taste

      *1 tablespoon butter, melted

      *1 tablespoon vegetable oil

      *4 slices American cheese

      * mustard and pickles (or your favorite toppings)

      *4 hamburger buns


      Directions:

      ~In a small bowl, mix onions and salt until well coated.

      ~Allow to sit for 5 minutes.

      ~Place onion's in a colander over a bowl or the sink and allow to sit for 30 minutes, tossing every once in a while.

      ~Divide the ground beef into 4 even pieces.

      ~Form into 4 lightly packed balls.

      ~Mix the butter and oil together and pour on griddle or frying pan.

      ~Place the ground beef balls onto a hot griddle or frying pan.

      ~Flatten burgers with a spatula (about 4 inches in diameter).

      ~Season with desired amount of salt and pepper.

      ~Place a mound of onions on top of the burger.

      ~Once the burgers have browned and form a crust, flip burger and onions so that the onions are now on the griddle/frying pan (about 2-4 minutes).

      ~Place the bottom bun over the burger and the top bun over the bottom bun (this steams the buns).

      ~Cook until the onions brown and the edges begin to crisp (about 2-3 minutes).

      ~Remove the buns and place a piece of cheese over the burger and allow to melt.

      ~Using a spatula, scoop up burger and grilled onions and place on bottom bun.

      ~Add mustard and pickles or desired toppings.

      ~Place on the top bun and enjoy.

      BBQ Turkey Burgers

      Juicy turkey burgers are so good.   I like to add a little spice to mine, but my husband prefers it without the spice.   Make it to your own liking.   Make sure your refrigerate your burger before cooking.  This will help it not fall apart while cooking it.


      BBQ TURKEY BURGER

      (makes 4)


      Burger Ingredients:

      *1 pound ground turkey

      *1 small yellow onion, grated

      *3 cloves garlic, grated

      *1/2 green pepper, finely chopped 

      *1 teaspoon ground cumin

      *1/2 teaspoon salt

      *1 teaspoon ground black pepper

      *1 teaspoon Worcestershire sauce 

      *1 large egg

      *3 tablespoons cold butter, diced small (or use mayo)

      *1/4 cup whole wheat bread crumbs (optional)

      *1/4  cup of your barbecue sauce

      *4 slices or your favorite cheese (optional)

      *4 whole wheat hamburger buns or flat bread 


      Burger Sauce Ingredients:

      *1/2 cup mayonnaise or greek yogurt 

      *1 - 2 teaspoons sriracha

      *1/8 teaspoon garlic powder 

      *1/4 cup cherry tomatoes, chopped fine

      *pinch of salt

      *pinch of ground black pepper


      Burger Topping Ingredients:

      *1/4 small cucumber, sliced thin 

      *1/4 small red onion, sliced

      *1/4 small carrot, shaved (I use a potato peeler)

      *Burger Sauce 


      Burgers Sauce Directions:

      ~In a small bowl, whisk 1/2 cup mayonnaise, 1-2 teaspoons sriracha, until well incorporated.

      ~Refrigerate for at least 3 hours.


      Burger Directions:

      ~In a large bowl, mix 1 small grated onion, 3 minced garlic cloves, 1/2 finely chopped green pepper, 1 teaspoon cumin,  1/2 teaspoons salt,1 teaspoon ground black pepper, 1 teaspoon Worcestershire sauce, 1 large egg,  3 tablespoons cold chopped butter, and 1/4 cup bread crumbs.

      ~Add in 1 pound ground turkey and mix (do not overman).

      ~Drizzle a little oil on your hands and rub to cover hands.

      ~Divide turkey mixture into 4 balls.

      ~Press down to desired thickness (will shrink some when cooking).

      ~Place burgers on a plate, cover and refrigerate for at least 3 hours.

      ~Heat olive oil (2 tablespoons) in a nonstick skillet over medium heat.

      ~Cook for 5-6 minutes.

      ~Flip burger and baste with 1/4 cup barbecue sauce.  

      ~Cook for another 5-6 minutes or until the internal temp is 160 degrees (the temp will rise to 165 while the burger is resting).

      ~ Transfer onto a wire rack or plate while you assemble the burgers (5 minutes)

      ~Toast buns if you choose.

      ~Place cheese on bottom bun.

      ~Place the burger on over the piece of cheese.

      ~Put some cucumbers, onions, carrots and lettuce over burger

      ~Spread some burger sauce on the top bun.

      ~Place top bun over burger and veggies.

      Bleu Cheese Burgers

       I love bleu cheese and having it burgers is da bomb.   The burger is good without the dressing if you prefer not to add the extra calories.  You can buy your favorite bleu cheese dressing if you don't want to make it.




      BLEU CHEESE BURGERS

      (4 burgers)


      Sauce Ingredients:

      *1/2 cup bleu cheese crumbles

      *1/4 cup sour cream

      *1/4 cup mayonnaise 

      *1/4 teaspoon Worcestershire sauce

      *1/8 teaspoon dry mustard

      *1/4 teaspoon garlic powder

      *1/8 teaspoon salt

      *1/8 teaspoon ground black pepper


      Burger Ingredients:

      *4 slices of your favorite cheese (optional) 

      *4 hamburger buns

      *1 pound ground beef (I use 80/20)

      *1/2 cup bleu cheese crumbles

      *2 tablespoons chopped chives

      *1/4 teaspoon Worcestershire sauce

      *1/4 teaspoon hot sauce 

      *1/4 cup butter, chopped (optional)

      *1/2 teaspoon coarse ground pepper

      *1/2 teaspoon salt

      *1/4 teaspoon dry mustard


      Bleu Cheese Dressing Directions:

      ~In a mixing bowl, whisk all the ingredients together.  

      ~Refrigerate for at least 6 hours (I normally make this the day before).


      Burger Directions:

      ~In a large bowl mix ground beef, bleu cheese crumbles, chives, Worcestershire sauce, hot sauce, butter, pepper, salt, and dry mustard (Do not over mix).

      ~Form into 4 patties.

      ~Place on a plate and cover with plastic wrap.

      ~Refrigerate for 2-8 hours.  

      ~Grill over high heat for 5-7 minutes on each side, or until burger is done.

      ~Place a piece of cheese over burger and transfer on to bottom half of bun (I like to toast my bun first.

      ~Spread some bleu cheese dressing over inside of top bun.

      ~Place over burger and enjoy.  


      Variation:

      `add bacon, tomato, pickles and lettuce if you like.

      Mock Fudruckers Burgers & Buns

      I must admit that Fudruckers buns are my all time favorite hamburger buns.  The burgers are pretty good too.   Now I can make them at home, rather than taking the 1/2 hour trip to the restaurant.  Add a fried egg if you want it to be the hangover burger.



      FUDRUCKERS BURGERS & BUNS
      (serves 6, with extra buns)

      Burger Ingredients:
      *1 1/2 pounds ground ground beef (80/20 is best)
      *1 teaspoon olive oil (optional)

      Seasoning Ingredients:
      *2 teaspoons paprika
      *1 1/2 teaspoons ground black pepper
      *1 1/4 teaspoons salt
      *1/2 teaspoon, packed light brown sugar
      *1/4 teaspoon onion powder
      *1/4 teaspoon garlic powder
      *1/8 teaspoon ground cayenne pepper

      Bun Ingredients:
      *5 teaspoons active dry yeast
      *1/4 cup warm (not hot) water
      *2 teaspoon granulated sugar
      *2 cups whole milk, warm
      *1/4 cup granulated sugar
      *1/2 cup butter, semi- melted (warm not not)
      *2 large eggs, beaten slightly
      *3/4 tablespoon salt
      *4 cups all-purpose flour
      *2 cups all-purpose flour
      *1 large egg
      *1 tablespoon water
      *1 tablespoon sesame seeds (optional)

      Extra Ingredients:
      *6-12 slices of cheddar or American cheese (or use your favorite cheese)
      *1 tomato sliced
      *lettuce
      *pickles
      *onions, sliced
      *12 slices bacon, cooked
      *ketchup, mustard or/and mayo

      Burger Directions:
      ~Mix ground and olive oil tougher.
      ~Form 6 patties and place on a plate.
      ~Cover with plastic wrap and refrigerate for at least 2 hours.
      ~Once you remove the patties from the refrigerator sprinkle desired amount of seasoning both sides of patties (you will have extra seasoning to use another time).

      Seasoning Directions:
      ~Mix paprika, pepper, salt, brown sugar, onion powder, garlic powder and cayenne pepper in a small bowl
      ~Cover until ready to use.
      ~I store my in an airtight container.

      Bun Directions:
      ~In a large mixing bowl, stir together water, 2 tablespoons sugar, and yeast tougher.
      ~Allow to sit for 5-10 minutes, or until foamy.
      ~Add warm milk, butter and 1/4 cup sugar into yeast mixture and mix on low speed (just for about 15-30 seconds) with paddle attachment.
      ~Add eggs and mix until well combined.
      ~Add 4 cups of flour and mix at medium speed for 1 minute, scraping down sides as needed.
      ~Dough will become very smooth.
      ~Remove paddle attachment and add dough hook.
      ~Add last 2 cups of flour, and mix on medium for 5-6 minutes (the dough will be sticky).
      ~Butter the sides and bottom of a large bowl.
      ~Place dough into bowl and cover with plastic wrap.
      ~Allow to rise in a draft free area for 2 1/2 hours (I put it in my oven as long as i'm not using it)
      ~Spread butter over 2 large baking sheets.
      ~Punch down dough.
      ~Roll out dough on a lightly floured surface into a about 1/2 inch thick (I roll mine into a circle, but you can do it into a rectangle if you choose).
      ~Using a round cookie cutter, biscuit cutter, or drinking glass and cut out as many buns as you can.
      ~Place on prepared pan about 3-inches apart.
      ~Cover buns loosely with plastic wrap and allow to rise in a draft-free area for 2 hours.
      ~Preheat oven to 375 degrees.
      ~In a small bowl, mix egg and water.
      ~Using a pastry brush, brush egg mixture gently over top of buns.
      ~Sprinkle with sesame seeds (optional).
      ~Bake for 15-20 minutes or until tops and bottoms are golden brown and it has a hollow sound with you tap it.
      ~Transfer onto cooling racks and cool completely.

      Time To Make The Burger:
      ~Grill burgers to desired doneness, only flipping once (I cook mine about 3-5 minutes on each side, depending on how thick the burger is).
      ~Cut buns in half horizontally.
      ~Spread the insides of buns with a little butter.
      ~Grill until golden brown and remove from heat.
      ~When burgers are almost done, put 1-2 slices of cheese.
      ~Cover with lid until cheese melts.
      ~On bottom half of bun place lettuce and tomato.
      ~Place burger over top of tomatoes.
      ~Add bacon, pickles, onions, and desired condiments.
      ~Place top bun on and enjoy.

      **If you don't have a kitchen aid mixer or sand mixer, do everything as listed above in a large bowl.  Knead dough until smooth and elastic or 8-10 minutes.

      Bacon Butter Burger

      Disclaimer: this is not a low fat burger, but it's oh so good.    Once in a while you just need to splurge.      I also like to sub the aioli sauce with a homemade burger spread.  To be honest, I like the burger spread best, but enjoy both.


      BACON BUTTER BURGER
      (makes 4)

      Butter Ingredients:
      *1/2 pound butter, softened
      *1 teaspoon dried basil
      *1 teaspoon dried parsley
      *1/2 teaspoon dried chives
      *1/4 teaspoon ground black pepper
      *1/8 teaspoon salt
      *2 garlic cloves, minced
      Aioli Ingredients:
      *1 cup mayonnaise
      *juice from 1 small lime
      *1 teaspoon paprika
      *1/4 teaspoon ground cumin
      *1 garlic bulb, roasted

      Burger Ingredients:
      *1 1/2 - 2 pounds ground beef
      *1 teaspoon Worcestershire sauce
      *1 teaspoon salt
      *1 teaspoon ground black pepper
      *8 slices of bacon
      *4 slices of your favorite cheese
      *4 large hamburger buns (I either make my own or buy some from Fudrucker's)
      *1 teaspoon butter, softened
      *dill pickle slices(optional)
      *slice onions (optional)
      *lettuce (optional)

      Directions:
      ~In a small bowl, mix softened butter, basil, chives, 1/4 teaspoon pepper, 1/8 teaspoon salt and minced garlic.
      ~Scoop into a piece of plastic wrap and form butter into a log.
      ~Wrap completely up and refrigerate for 2 hours.
      ~Blend mayonnaise, lime juice, paprika, cumin and roasted garlic in a food processor until smooth and refrigerate for 2 hours.
      ~Cook bacon and set aside.
      ~Spread butter onto inside of each bun and toast, set aside.
      ~Mix worcestershire sauce, salt and pepper together.
      ~Form hamburger into 8 patties.
      ~Place a slice of butter mixture on top of four patties.
      ~Place another patty over butter mixture and seal the two patties together.
      ~Place burgers on a baking sheet or cast iron pan.
      ~Preheat oven to broil.
      ~Cook burgers to desired doneness (flip only if necessary).
      ~Remove pan from oven.
      ~Add another slice of butter to the tops of each burger and place a slice of cheese over the butter.
      ~Return to broil, just until cheese is melted.
      ~Place burgers on toasted buns.
      ~Spread Aioli sauce over top bun.
      ~Add bacon on top of burger.
      ~Add onion, pickle and lettuce over bacon if desired.

      Turkey Feta Spinach Burgers

      Oh my, these are so good.   Now if you are not a big fan of turkey burgers you can substitute the ground turkey with ground beef or ground chicken.   I would give it a try at least, because it's nothing like your typical turkey burger.







      TURKEY FETA SPINACH BURGERS
      (makes 4)

      Burger Ingredients:
      * 1 tablespoon butter or olive oil
      *1/2 small onion, chopped
      *2 cloves garlic, minced
      *2 cups fresh spinach, chopped
      *1/4 cup water
      *2 ounces feta cheese
      *1/4 - 1/2 cup sun dried tomatoes, chopped
      *1 pound ground turkey (chicken or hamburg)
      *1 egg, beaten
      *1 teaspoon salt
      *1 teaspoon ground black pepper
      *1/2 teaspoon paprika
      *1/4 cup dried bread crumbs (optional)
      *1 teaspoon olive oil
      *red onion, sliced (optional)
      *black olives, slice (optional)
      *4 hamburger buns, (I like to toast mine)

      Tzatziki Ingredients:
      *1/2 cucumber, peeled, seeded and chopped
      *1 teaspoon kosher salt
      *1 cup plain greek yogurt
      *1/4 cup sour cream
      *1 tablespoon freshly squeezed lemon juice
      *1 teaspoon dried dill weed
      *1 teaspoon olive oil
      *1/2 garlic clove, minced
      *1/8 teaspoon ground oregano
      *1/8 teaspoon ground black pepper

      Tzatziki Directions:
      ~In a small bowl, combine cucumber and 1 teaspoon kosher salt.
      ~Allow to sit for 10-15 minutes.
      ~Place colander over a bowl.
      ~Pour salted cucumber into colander.
      ~Squeeze the cucumber until the liquid as drained from the cucumbers.
      ~Allow to sit.
      ~In another bowl, mix yogurt, sour cream, lemon juice, olive oil, minced garlic, dill weed, oregano, and pepper.
      ~Stir drained cucumber into sour cream mixture.
      ~Cover and refrigerate for at least 3 hours (I do mine the night before).

      Burger Directions:
      ~In a large saucepan, sauté onions in butter until onions are translucent.
      ~Add minced garlic and cook for another 1 -2 minutes, stirring often.
      ~Add water and chopped spinach.
      ~Cover and cook until spinach is wilted.
      ~Remove from heat and allow to cool for 10 -15 minutes.
      ~Mix egg, feta cheese, sun dried tomatoes, ground turkey, salt, pepper, paprika, bread crumbs and spinach mixture together.
      ~From into four patties.
      ~Plate, cover and refrigerate for at least 1 hour (you can still this, but it helps keeping the patties from falling apart).
      ~Preheat oven to 350 degrees or set grill to medium high.
      ~Spray a cookie sheet with a cooking spray or lightly oil grill grate.
      ~Brush tops of pattie with olive oil.
      ~Bake for 35-40 minutes or until burgers are done or grill or 15-20 minutes.
      ~Place burgers on buns.
      ~Put a dollop of tzatziki sauce over burger and place top bun on burger.

      Variations:
      `Place a slice of cheese over burger right after removing it from heat.
      `Place chopped olives over top of burger after it's removed from heat, but before you put the top bun on.
      `Mix in 1/2 cup of cooked rice into meat before cooking.

      Bacon Cheeseburger Quesadillas

      Yummy, yummy, yummy.   A quick, easy and good meal.  Great with soups or all by itself.  If you like bacon cheeseburgers you will like this.




      BACON CHEESEBURGER QUESADILLA
      (serves 4)

      Ingredients:
      *1/2 lean ground beef
      *4 slices bacon, cooked & crumbled
      *1/4 small onion, chopped
      *1/4 - 1/2 cup fresh mushrooms, chopped (optional)
      *1/4 cup dill or sweet relish (optional)
      *1/2-1  cup sharp shredded cheese.
      *4 slices provolone cheese
      *ketchup, mustard & mayo (use whatever you like on your burger)
      *8  (6 inch) tortillas
      *butter

      Directions:
      ~In a large skillet, cook ground beef, onion, mushroom & relish.  Cooking until ground beef is browned.
      ~Drain any grease.
      ~Add shredded cheese and mix until melted.
      ~Lay 4 tortillas out flat.
      ~Place a slice of provolone cheese on each tortilla.
      ~Divide beef mixture evenly over cheese.
      ~Add ketchup, mustard or mayonnaise or all three for a slop burger over beef mixture.
      ~Place the rest of the tortillas over the top.
      ~Spred butter over top of tortilla.
      ~Place tortilla butter side down onto a hot griddle or skillet (over medium heat).
      ~Spread butter over other side of tortilla.
      ~Once tortilla is a golden brown, flip and grill on other side until tortilla is brown.

      Variations:
      `add chopped jalapeño peppers right before grilling.
      `add red or green bell peppers to burger mixture at the start of the cooking.
