Healthier Sourdough Blueberry Muffins

 I think these are pretty filling and good.




HEALTHIER SOURDOUGH BLUEBERRY MUFFINS:

(makes 12)


Ingrediens:

*1 cup unbleached all-purpose flour

*1 cup yellow cornmeal

*3/4 teaspoon salt

*1 teaspoon baking powder

*2 teaspoons ground cinnamon

*1/4 teaspoon ground nutmeg

*1 cup sourdough starter or discard

*1/4 cup whole milk

*4 tablespoons vegetable oil 

*1/2 cup pure maple syrup or honey

*2 cups blueberries

*2 teaspoon cinnamon sugar


Directions:

~Preheat oven to 425 degrees.

~In a large bowl, whisk 1 cup sourdough starter, 1/4 cup whole milk, 4 tablespoons vegetable oil, and 1/2 cup maple syrup together.

~Add 1 cup flour, 1 cup cornmeal, 3/4 teaspoon salt, 1 teaspoon baking powder, 2 teaspoons ground cinnamon, and 1/4 teaspoon nutmeg.

~Stir until you no longer see the flour (do not over mix).

~Fold in 2 cups blueberries.

~Line a muffin pan with cupcake liners an spray them with cooking spray.

~Fill muffin pan with batter.

~Sprinkle tops with cinnamon sugar.

~Bake for 20-25 minutes or until done.

~Remove from pan and allow to cool on a wire rack.

Banana Pumpkin Muffins

The mixture of banana and pumpkin is tasty.  I like the maple glaze on top of it.  Adding some dried cranberries or white chocolate chips (or both) would make it even better.




BANANA PUMPKIN MUFFINS

(makes 24)


Bread Ingredients:

*1 cup granulated sugar

*1/4 cup butter, softened

*2 ripe bananas, mashed

*1 (15 ounce) can pumpkin puree

*1/4 cup whole milk

*1/4 cup plain greek yogurt

*2 large eggs, room temperature 

*2 cups all purpose flour, sifted

*1/4 teaspoon salt

*1 teaspoon baking soda

*1 tablespoon pumpkin pie spice

*1 cup pecans, chopped

Streusel Ingredients:

1/4 cup butter, softened

*1/2 cup all-purpose flour

*1/2 cup light brown sugar

*1 teaspoon ground cinnamon

Topping Ingredients:

*1 cup powdered sugar, sifted

*2-4 tablespoons heavy cream (or whole milk)

*1/4 teaspoon maple flavoring (or 1 teaspoon maple syrup)

*1/4 cup pecans, chopped very fine


Bread Ingredients:

~Preheat oven to 350 degrees.

~Grease and lightly flour a muffin pans (or use liners).

~In a large mixing bowl, cream butter and sugar together until fluffy.

~Add in mashed bananas, pumpkin puree, milk, yogurt, and eggs until well incorporated.

~Sift in flour, salt,  pumpkin pie spice and  baking soda into a medium bowl.

~Add to wet ingredients and mix until just mixed (do not over mix, some lumps are ok).

~Pour mixture into prepared muffin pans.

Streusel Directions:

~In  a small bowl, cut butter, flour, cinnamon and brown sugar with a fork until mixture because pea sized crumbs.

~Sprinkle mixture of bread batter.

~Bake for 25-30 minutes, or until toothpick comes out clean when inserted into center of muffins.

~Remove from oven and cool for 10 minutes on a cooling rack.

~Remove muffins from pan and continue cooling on cooling rack.

Topping Directions:

~In a small bowl, whisk powdered sugar, heavy cream, and maple flavoring until mixture is smooth (if you want a thin topping add more heavy cream).

~Drizzle over muffins while it's still warm (not hot).

Jumbo Cranberry Orange Muffins

 I love orange and cranberry together.   This is also really good with some white chocolate chips and/or pecans in it.




JUMBO CRANBERRY ORANGE MUFFINS

(makes 6-8)


Ingredients:

*1 cup cranraisins

*2 oranges

*zest from two oranges

*3 cups all-purpose flour

*1 tablespoon baking powder

*1/2 teaspoon salt

*1/4 teaspoon ground nutmeg

*1/2 teaspoon ground cinnamon

*1/2 cup butter, softened

*1 cup granulated sugar

*1/3 cup cup brown sugar, packed

*2 large eggs

*1 cup sour cream

*Coarse sugar (optional)


Directions:

~Preheat oven to 400 degrees.

~Line large muffin tin with liners for spray with cooking spray and dust with flour.

~Zest 2 oranges.

~Peal (remove any white pith) from large and cut into chunks.

~Put oranges, zest, and 1 cup dried cranberries into a food processor or blender and mix until oranges are pureed. 

~In a large bowl, sift 3 cups flour, 1 tablespoon baking powder, 1/2 teaspoon salt, 1/4 teaspoon nutmeg, and 1/2 teaspoon cinnamon together.

~In another bowl, beat 1/2 cup softened butter, 1 cup granulated sugar, 1/3 cup brown sugar and cranberry orange mixture together.

~Beat in 2 large eggs and 1 cup sour cream until well mixed.

~Pour wet ingredients into the dry ingredients until just mixed (do not over mix).

~Scoop batter evenly into muffin tin (almost to the top).

~Sprinkle tops with coarse sugar (optional).

~Bake for 35-40 minutes (or until a toothpick inserted comes out clean).

~Remove from tins and allow to cool.

Jumbo Chocolate Chocolate Chip Muffins

I would say that each muffin is big enough for two, but they are too good to share.   You could swap out the chocolate chips and add peanut butter chips or white chocolate chops.

Ingredient:

*2 cups all-purpose flour

*3/4 cup granulated sugar

*1 cup milk chocolate chips

*1/3 cup unsweetened cocoa powder

*1 teaspoon baking powder

*1 teaspoon baking soda

*1/8 teaspoon salt

*1 large egg

*1 cup sour cream

*1/4 cup  + 1 tablespoon whole milk

*1 teaspoon instant coffee granules 

*1 teaspoon vanilla extract

*1/4 cup vegetable oil


Directions:

~Preheat oven to 400 degrees.

~Line large muffin tin tin with liners or spray and dust with flour.

~In a mixing  bowl,  whisk 1large egg, 1 cup sour cream, 1/4 cup + 1 tablespoon milk, 1 teaspoon vanilla extract, 1 teaspoon  coffee granules, and 1/4 cup vegetable oil until well combined.

~In a large mixing bowl, sift 2 cups flour, granulated sugar, 1/3 cup unsweetened cocoa, 1 teaspoon baking soda, 1 teaspoon baking powder and 1/8 teaspoon salt.

~Stir in 1 cup chocolate chips, until chips are coated well.

~Mix wet ingredients into dry ingredients just until combined (do not over mix).

~Divide batter evenly into muffin tin.

~Bake for 10 minutes.

~Reduce heat to 350 degrees.

~Bake for another 20-30 minutes or until done (when a toothpick is inserted and comes out clean).

~Remove from tins and allow to cool.

Jumbo Banana Nut Muffins

 You can make this into 18-20 smaller muffins if you want, but why would you want to.   Great for breakfast or to give as gift to a friend.



JUMBO BANANA NUT MUFFINS

(makes 6)


Muffin Ingredients:

*3 bananas, very ripe, mashed until smooth

*1/4 cup butter, melted

*1/2 cup brown sugar, packed

*1/2 cup granulated sugar

*2 large eggs, room temperature

*1 teaspoon vanilla extract

*1/2 cup buttermilk

*1 2/3 cups all purpose flour

*1 teaspoon baking powder

*1/2 teaspoon baking soda

*1/4 teaspoon salt

*1 teaspoon ground cinnamon

*3/4 cup walnuts, chopped

Topping Ingredients:

*14 cup butter, melted

*1/3 cup raw sugar (or coarse sugar)

*1/2 cup all-purpose flour

*1 teaspoon ground cinnamon


Muffin Directions:

~Preheat oven to 375 degrees.

~Spray jumbo muffin tin with cookie spray of line with the large tulip paper liners.

~In a large mixing bowl, smash the bananas until smooth.

~Stir in melted butter granulated sugar and brown sugar, mix until well incorporated.

~Stir in eggs, vanilla extract, and buttermilk and mixed until smooth.

~Sift in flour, baking powder, baking soda, salt, and cinnamon stir until smooth.

~Stir in walnuts.

~Scoop into prepared muffins tens (about 1/2 cup into each).

Topping Directions:

~In a medium bowl,  mix melted butter, flour, sugar, and cinnamon until mixture is crumby.

~Divide topping over batter

~Bake in preheated oven for 30 minutes.

~Remove from oven all allow to cool for ten minutes, before removing them from the muffin tin.

Chocolate Chocolate Chip Muffins

 If you are craving chocolate, this will take care of that craving.  My granddaughter loves these.



CHOCOLATE CHOCOLATE CHIP MUFFINS

(makes 20-24)


Ingredients:

*2 large eggs, room temperature 

*3/4 cup sour cream

*1/2 cup whole milk

*1/2 cup vegetable oil

*1 teaspoon vanilla extract

*1 3/4 cup all-purpose flour

*2/3 cup unseated cocoa powder (I like to use dutch)

*1 cup granulated sugar

*1 1/2 teaspoons baking powder

*1 teaspoon baking soda

*1/2 teaspoon salt

*1 cup semi-sweet chocolate chips

*1 cup milk chocolate chips

* 1/3 cup milk chocolate chips (for topping)


Directions:

~Preheat oven to 425 degrees.

~Line a muffin tin with papers.

~In a large mixing bowl, sift all-purpose flour, unsweetened cocoa, baking soda, baking powder, salt and sugar.

~Mix 1 cup semi-sweet chocolate chips and 1 cup milk chocolate chips into flour mixture and coat well.

~In a clean bowl, whisk eggs.

~Stir in vanilla, vegetable oil, sour cream, and milk until well mixed.

~Mix dry ingredients into wet ingredients, mix until just combined (do not over mix).

~Fill muffin tins with batter to just about the top.

~Sprinkle remains milk chocolate chips over batter.

~Bake for 5 minutes.

~Reduce oven temperature to 350 degrees.

~Bake for 15-18 minutes, or until toothpick inserted comes out clean.

    Gingerbread Muffins

    This recipe screams Christmas to me.   I love most anything with molasses in it.




    GINGERBREAD MUFFINS

    (makes 20-24)


    Ingredients:

    *1/2 cup vegetable oil

    *1/4 cup granulated sugar 

    *1/4 cup light brown sugar

    *1 cup molasses

    *1 large egg, beaten and room temperature

    *3 cup all-purpose flour, sifted

    *1/2 teaspoon baking soda

    *1/4 teaspoon baking powder

    *1 teaspoon ground cinnamon

    *1/2 teaspoon ground ginger

    *1/2 teaspoon salt

    *1 cup milk, room temperature

    *coarse sugar for sprinkling


    Directions:

    ~Preheat oven to 350 degrees.

    ~Add paper liners to muffin tins.

    ~In a large bowl,  stir granulated sugar, brown sugar, and oil together.

    ~Stir in molasses and egg.

    ~In a clean mixing bowl, sift together, flour, baking soda, baking powder, cinnamon, ginger and salt.

    ~Stir dry ingredients into wet ingredients, just slightly.

    ~Stir in milk until just combined.

    ~Fill muffin tin to 2/3 full.

    ~Sprinkle with coarse sugar.

    ~Bake for 20-25 minutes, or until a toothpick comes out clean when inserted into muffin.

    ~Remove from oven and set on a cooling rack.

    ~Cool for 10 minutes, before  removing them from the pan.

    Loaded Pumpkin Muffins

    This is not a low-cal muffin, but it sure is good.  It makes a lot, but they freeze well or you could just share them with your friends and neighbors.




    LOADED PUMPKIN MUFFINS

    (makes 24-28 )


    Muffins Ingredients:

    *3 cups all-purpose flour

    *2 cups granulated sugar

    *1 teaspoon baking soda

    *1 teaspoon baking powder

    *1/2 teaspoon ground cloves

    *2 teaspoons ground cinnamon

    *1/2 teaspoon ground nutmeg

    *1 teaspoon salt

    *1 (15 ounce) can pumpkin puree

    *2/3 cup vegetable oil

    *3 large eggs

    *3/4 cup white chocolate chips (dusted in flour)

    *1/4 cup butterscotch chips (dusted flour)

    *1/2 cup dried cranberries (dusted in flour)

    *1/4 cup chopped pecans (dusted in flour)

    Topping Ingredients:

    *4 tablespoons flour

    *1/2 cup granulated sugar

    *1 teaspoon ground cinnamon

    *1/2 cup butter, sliced


    Muffin Directions:

    ~Lightly dust white chocolate chips, butterscotch chips, dried cranberries, and pecans in flour and set aside (this helps so they sink to the bottom of the muffins.

    ~Preheat oven o 350 degrees.

    ~Spray muffin tin with cooking spray or line with cupcake liners.

    ~In a large bowl, sift flour, sugar, baking soda, baking powder, cloves,  cinnamon, nutmeg, and salt together.

    ~In a separate bowl, mix pumpkin puree, vegetable oil, and eggs together.

    ~Stir pumpkin mixture into flour mixture until smooth.

    ~Stir in white chocolate chips, butterscotch chips, cranberries, and pecans.

    ~Scoop into prepared muffin tin.

    Topping Directions:

    ~In a small bowl, mix together flour, sugar and cinnamon.

    ~Cut in butter until mixture resembles coarse crumbs.

    ~Sprinkle topping evenly over muffin batter.

    ~Bake for 30-35 minutes, or until took pick inserted into the center of muffin comes out clean.

    Cranberry-Orange-White Chocolate Muffins

     I'm not a big fan of white chocolate, but I do like them in this recipe.  White chocolate, orange and cranberries just seem to go together.  



    CRANBERRY-ORANGE-WHITE CHOCOLATE MUFFINS

    (makes 24)


    Ingredients:

    *1 cup cranraisins 

    *1 cup hot water

    *3 cups all-purpose flour

    *1 tablespoon baking powder

    *1/2 teaspoon salt

    *1/4 teaspoon nutmeg

    *1/2 teaspoon ground cinnamon

    *1/2 cup butter, softened

    *1 cup granulated sugar

    *1/3 cup light brown sugar, packed 

    *1 tablespoon orange zest

    *2 large eggs

    *1 teaspoon pure vanilla extract

    *1/3 cup freshly squeezed orange juice

    *1 cup sour cream

    *1/2 cup pecans, chopped 

    *1 cup white chocolate chips


    Directions:

    ~Preheat oven to 400 degrees.

    ~In a large bowl, sift flour, baking powder, salt, nutmeg, and cinnamon together.

    ~In a mixing bowl, beat butter,  orange zest, granulated sugar, and brown sugar together and until light and fluffy.

    ~Beat in eggs, one at a time.

    ~In a small bowl, whisk sour cream and orange juice together until well mixed.

    ~Mix flour, and sour cream alternately into butter mixture, mixing lightly between each addition, about 1/3 of mixture added each time (do not over mix)

    ~Line muffin tin with paper liners and spray with cooking spray.

    ~Divide the batter evenly into prepared pan.

    ~Bake for 24-26 minutes (I turn the pans half way through).

    Cranberry Orange Muffins

    I love the combination of orange and cranberries.   These muffins are so moist and delicious.   Easy and quick to make.  If you don't have applesauce you can replace it with vegetable oil



    CRANBERRY ORANGE MUFFINS
    (makes 12)

    Ingredients:
    *1 cup dried craisins
    *3/4 cup orang juice
    *2 cups all-purpose flour
    *1 cup granulated sugar
    *2 teaspoons baking powder
    *1/2 teaspoon baking soda
    *1/2 teaspoon salt
    *1 large egg
    *3/4 teaspoon fresh squeezed orange juice
    *1/4 cup plain apple sauce
    *1 1/2 teaspoon grated orange rind
    *3/4 cup slivered almonds

    Directions:
    ~Preheat oven to 400 degrees.
    ~Spray muffin pan with cooking spray.
    ~In a small saucepan,  heat up 3/4 cup orange juice and craisins over medium heat until mixture comes to a boil.
    ~Remove from heat and allow mixture to come to room temperature.
    ~In a medium bowl, sift flour, sugar, baking powder, baking soda and salt together.
    ~Drain cranberries and gently mix into dry ingredients.
    ~In mixer bowl, beat egg, fresh squeezed orange juice, applesauce, orange rind and almonds.
    ~Stir dry ingredients into wet ingredients until just moistened.
    ~Spoon dough into muffin pans 3/4 full.
    ~Bake for 15-20 minutes.
    ~Remove from pan and allow to cool on cooling rack.

    Chocolate Chip Bran Muffins

    This is a basic bran muffin recipe.     I love that these are healthy and so good.  You can even make it less calories by leaving out the chocolate chips if you want.  Muffins are about 120 calories each.  Not bad for a muffin.





    CHOCOLATE CHIP BRAN MUFFINS
    (makes 12)

    Ingredients:
    *1 1/2 cups wheat bran
    *1 cup buttermilk
    *1/3 cup unsweetened applesauce
    *1 egg
    *1/2 cup brown sugar, packed
    *1/2 teaspoon pure vanilla extract
    *1 cup all-purpose flour
    *1 teaspoon baking powder
    *1 teaspoon ground cinnamon
    *1/2 teaspoon salt
    *1/2 cup raisins
    *1/2 cup dark chocolate chips

    Directions:
    ~Preheat oven to 375 degrees.
    ~Spray a muffin pan with cooking spray or line with paper muffin liners.
    ~In a small bowl, mix wheat brand and buttermilk together.
    ~Let mixture stand for 10-12 minutes.
    ~In a mixing bowl, beat applesauce, egg, vanilla and bran mixture until well mixed.
    ~Sift together flour, baking powder, cinnamon and salt.
    ~Stir dry ingredients into the wet ingredients, until just blended.
    ~Fold in raisins and chocolate chips.
    ~Spoon evenly into muffins cups.
    ~Bake for 18-20 minutes.
    ~Remove from pan and allow to cool on a cooling rack.

    Variations: 

    ~Substitute dark chocolate chips with milk chocolate or semi sweet chocolate chips.

    ~Substitute raisins with cranraisins. 
    ~Omit chocolate chips and or raisins. 
    ~Add 1/2 cup chopped pecans.

    Banana Muffins

    We all get bananas that get over ripe way to quick.   I will normally throw my in the refrigerator or freezer until I'm ready to make something with it.  This is a recipe that the kids love to help with and really enjoy eating.  





    BANANA MUFFINS
    (makes 10-12)

    Muffin Ingredients:
    *1 1/2 cups all-purpose flour
    *3/4 teaspoon ground cinnamon
    *1/2 teaspoon ground nutmeg
    *1 teaspoon baking powder
    *1 teaspoon baking soda
    *1/2 teaspoon salt
    *1 egg
    *1/3 cup melted butter
    *3/4 cup granulated sugar
    *1 teaspoon pure vanilla extract
    *3-4 very ripe bananas, mashed

    Topping Ingredients:
    *1/2 cup white sugar
    *1/4 cup brown sugar
    *3 tablespoons all-purpose flour
    *1/4 teaspoon ground cinnamon
    *1 1/2 teaspoons butter

    Directions:
    ~Preheat oven to 375 degrees.
    ~Line muffin pan with paper liners, or spray muffin pan with a cooking spray.
    ~In a mixing bowl, mix 1 1/2 cups flour, cinnamon, nutmeg, baking powder, baking soda & salt.
    ~In a small bowl, lightly beat egg.
    ~In another bowl, mix egg, melted butter,  3/4 cup granulated sugar, vanilla & bananas.
    ~Mix banana mixture into dry ingredients until just mixed, do not over mix.
    ~Spoon batter evenly into muffin pan.
    ~Mix brown sugar, 1/2 cup granulated sugar, flour & cinnamon until well mixed.
    ~Cut in butter until mixture resembles a corse meal.
    ~Sprinkle over the top of the muffins.
    ~Bake for 17-20 minutes, or until done.  Mini muffins 10-12 minutes.

    Banana Pumpkin Bread

    I love all the things that I can make with pumpkin.   This is so moist and wonderful.   The mixture of banana, pumpkin & spices make this bread awesome.   I like to make this bread into muffins or mini loafs.  Great with a mug of hot apple cider.



    BANANA PUMPKIN BREAD
    (makes 1 loaf or 24 muffins)

    Ingredients:
    *3 very ripe bananas, mashed
    *2 large eggs, room temperature
    *1/3 cup unsweetened applesauce
    *1 1/3 cup pumpkin puree
    *1/2 cup honey
    *1/2 cup granulated sugar
    *2 1/2 cups unbleached all-purpose flour
    *1 teaspoon baking powder
    *1 teaspoon baking soda
    *1/2 teaspoon salt
    *1 1/2 teaspoons ground cinnamon
    *1/2 teaspoon ground nutmeg
    *1/4 teaspoon ground ginger
    *1/8 teaspoon ground cloves
    *3/4 cup dried cranberries
    *1/4 cup chocolate chips
    *1/2 cup walnuts, chopped

    Directions:
    ~Preheat over to 350 degrees.
    ~Spray a 9x5 inch loaf pan, muffin tins or mini loaf pans with a cooking spray.
    ~In a large mixing bowl, mix bananas, eggs, applesauce, pumpkin puree, honey & sugar.
    ~In a medium bowl, sift flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger & cloves together.
    ~Stir the dry ingredients into the wet ingredients until just combined.
    ~Fold in cranberries, chocolate chips & walnuts.
    ~Pour mixture into prepared pans.
    ~Bake the large loaf pan for 40-45 minutes.  Bake the mini loaf pans for 25-30 minutes.  Bake the muffins for 18-22 minutes.  Toothpick should come out clean when inserted into bread.
    ~If using the large loaf pan, cool for 10 minutes before removing from pan and cool completely on a wire rack.  If using a mini loaf pan, let cool for 5 minutes before removing from pan.  If using muffin pan, remove after sitting for 2-3 minutes (I usually will use paper liners & spray them for the muffin pans.   Those you can remove immediately after removing from the oven).

    Variation:
    `substitute dried cranberries with raisins.
    `substitute dried cranberries with dried blueberries.
    `substitute chocolate chips with butterscotch chips.
    `omit dried cranberries, nuts or chocolate chips or all if you want.

    Fruit and Veggie Muffins

    This is such a moist, filling, delicious muffin.   I love that they are  only 94 calories each.  This is so low in calories that you could put a teaspoon of peanut butter on it and not feel guilty.  Simple to make and will freeze well.



    FRUIT AND VEGGIE MUFFINS
    (makes 18)

    Ingredients:
    *1 1/4 cups all-purpose flour
    *1/2 cup whole wheat flour
    *1/2 cup oatmeal, dry
    *1 cup granulated sugar
    *2 teaspoons ground cinnamon
    *1 teaspoon pumpkin pie spice
    *3 teaspoons baking powder
    *1/2 teaspoon baking soda
    *1/2 teaspoon salt
    *1 cup carrots, grated
    *1 medium zucchini, grated
    *1 large apple, peeled, cored & grated
    *1 cup cranraisins or raisins
    *1 egg
    *4 egg whites
    *1 tablespoon pure vanilla extract
    *1 cup applesauce, unsweetened (I make my own)
    *3 tablespoon walnuts, chopped fine
    *3 tablespoons toasted wheat germ

    Directions:
    ~Preheat oven to 375 degrees.
    ~Line muffin pans with muffin liners & spray them with cooking spray.
    ~In a medium bowl, whisk egg & egg whites together.
    ~Soak raisins in eggs for about 10 minutes.
    ~Mix applesauce & vanilla into the egg mixture.
    ~Run oatmeal through blender to make it fine (optional)
    ~In a large mixing bowl, mix in all purpose flour, whole wheat flour, sugar, oatmeal, cinnamon, pumpkin pie spice, baking powder, baking soda &salt.
    ~Stir in carrots, zucchini & apples.
    ~Mix the wet ingredients into the dry ingredients (do not over mix).
    ~Spoon batter into prepared muffin pan about 3/4 full.
    ~In a small bowl, combine wheat germ & nuts.
    ~Sprinkle over top of muffins.

    Blueberry Muffins

    I think blueberry muffins are great for a breakfast or a snack. They are good warm or cold. So easy to make, and freeze well too.


    BLUEBERRY MUFFINS
    (Makes 12)

    Muffin Ingredients:
    *2 cups all-purpose flour
    *3/4 cup white sugar
    *1/2 teaspoon salt
    *2 teaspoons baking powder
    *1/3 cup vegetable oil
    *2 eggs
    *1/2 cup milk
    *1/4 cup sour cream
    *1/2 teaspoon pure vanilla extract
    *1 cup fresh blueberries

    Streusel Topping Ingredients:
    *2 tablespoon all-purpose flour
    *5 tablespoon white sugar
    *1/2 teaspoon ground cinnamon
    *2 tablespoons butter, diced

    Directions:
    ~Preheat oven to 400 degrees.
    ~In a large mixing bowl, sift flour, sugar, salt & baking powder.
    ~Mix oil, sour cream, eggs, vanilla & milk into dry mixture.
    ~Fold in blueberries.
    ~Put cupcake liners into muffin pan, or grease muffin pan.
    ~Combine flour, sugar, & cinnamon in a small bowl.
    ~Cut in butter with fork until mixture resembles course crumbs.
    ~Sprinkle over batter before baking.
    ~Fill to the top with muffin mix.
    ~Bake for 23-25 minutes.

    Apple Pumpkin Muffins

    Apple & Pumpkins are two foods that scream fall to me. These are so good and easy to make. I am not a big pumpkin person, but I do like these.


    APPLE PUMPKIN MUFFINS
    (2 dozen)

    Ingredients:
    *2 1/2 cups all-purpose flour
    *2 cups white sugar
    *1 tablespoon pumpkin pie spice
    *1 teaspoon cinnamon
    *1 teaspoon baking soda
    *1/2 teaspoon salt
    * 2 large eggs
    *1 (15 ounce) can of pumpkin puree
    *1/2 cup vegetable oil
    *2 cups apple, peeled, finely chopped (use a sweet apple)
    Topping Ingredients:
    *1/4 cup brown sugar, packed
    *2 tablespoons flour
    *1 teaspoon ground cinnamon
    *4 teaspoons butter, cold

    Directions:
    ~Preheat oven to 350 degrees.
    ~In a large mixing bowl, combine the 2 1/2 cups flour, 2 cups white sugar, 1 tablespoon pumpkin pie spice, 1 teaspoon cinnamon, 1 teaspoon baking soda and 1/2 teaspoon salt.
    ~In a small bowl, combine 2 large eggs, 1 (15 ounce) can pumpkin puree, and 1/2 cup vegetable oil.
    ~Stir the egg mixture into the flour mixture.
    ~Mix just until moistened.
    ~Fold in 2 cups chopped apples.
    ~Fill into a greased or paper-lined muffin pan.
    Topping Directions:
    ~In a small bowl, combine 1/4 cup brown sugar, 2 tablespoons flour, and 1 teaspoon cinnamon.
    ~Cut in 4 teaspoons butter until mixture becomes crumbly.
    ~Sprinkle over muffin batter.
    ~Bake for 20-25 minutes.
    ~Cool for 5 minutes.
    ~Remove from muffin pan.
