BBQ Rotisserie Chicken

 Easy to make and oh so good.   Moist and tender chicken.  



BBQ ROTISSERIE CHICKEN

(serves 4)


Ingredients:

*1  4-6 pound whole chicken 

*1 sweet onion, skin removed and sliced to desired thickness

*1 red bell pepper, sliced to desired thickness

*1 yellow bell pepper, sliced to desired thickness

*bbq sauce (use your favorite,  I make my own)

*1/2 cup water

*2 teaspoons vegetable oil

*1/2-1  teaspoon ground black pepper

*1 teaspoon sea salt

*1 teaspoon garlic powder

*1 teaspoon onion powder

*1 teaspoon Italian seasoning

*1 teaspoon parsley flakes

*1/2 teaspoon smoked paprika

*1/4 teaspoon ground cumin (optional)


Directions:

~Preheat oven to 350 degrees.

~You can leave chicken whole or cut out the back bone and so the chicken can lay flat (spatchcock)

~Place 1 sliced red & yellow pepper and 1 sliced sweet onions on bottom of a 9x13 inch baking dish.

~Rub 2 teaspoons vegetable oil all over chicken.

~Pour 1/2 cup water over veggies

~In a small bowl, mix 1 teaspoon ground black pepper, 1 teaspoon salt, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon parsley flakes, 1 teaspoon Italian seasoning, 1/2 teaspoon smoked paprika, and 1/4 teaspoon ground cumin..

~Rub half of the spices over the back of the chicken.

~Spread desired amount of bbq sauce over the back of  chicken.

~Place chicken bottom side down over veggies.

~Rub remaining spices over chicken.

~Bake in preheated oven for 2 hours (or until chicken in done)

~Remove chicken from oven and spread desired amount of bbq sauce oven top of chicken.

~Bake for another 15-20 minutes.

~Remove from oven and allow to sit for 5-10 minutes before cutting.

BBQ Turkey Burgers

Juicy turkey burgers are so good.   I like to add a little spice to mine, but my husband prefers it without the spice.   Make it to your own liking.   Make sure your refrigerate your burger before cooking.  This will help it not fall apart while cooking it.


BBQ TURKEY BURGER

(makes 4)


Burger Ingredients:

*1 pound ground turkey

*1 small yellow onion, grated

*3 cloves garlic, grated

*1/2 green pepper, finely chopped 

*1 teaspoon ground cumin

*1/2 teaspoon salt

*1 teaspoon ground black pepper

*1 teaspoon Worcestershire sauce 

*1 large egg

*3 tablespoons cold butter, diced small (or use mayo)

*1/4 cup whole wheat bread crumbs (optional)

*1/4  cup of your barbecue sauce

*4 slices or your favorite cheese (optional)

*4 whole wheat hamburger buns or flat bread 


Burger Sauce Ingredients:

*1/2 cup mayonnaise or greek yogurt 

*1 - 2 teaspoons sriracha

*1/8 teaspoon garlic powder 

*1/4 cup cherry tomatoes, chopped fine

*pinch of salt

*pinch of ground black pepper


Burger Topping Ingredients:

*1/4 small cucumber, sliced thin 

*1/4 small red onion, sliced

*1/4 small carrot, shaved (I use a potato peeler)

*Burger Sauce 


Burgers Sauce Directions:

~In a small bowl, whisk 1/2 cup mayonnaise, 1-2 teaspoons sriracha, until well incorporated.

~Refrigerate for at least 3 hours.


Burger Directions:

~In a large bowl, mix 1 small grated onion, 3 minced garlic cloves, 1/2 finely chopped green pepper, 1 teaspoon cumin,  1/2 teaspoons salt,1 teaspoon ground black pepper, 1 teaspoon Worcestershire sauce, 1 large egg,  3 tablespoons cold chopped butter, and 1/4 cup bread crumbs.

~Add in 1 pound ground turkey and mix (do not overman).

~Drizzle a little oil on your hands and rub to cover hands.

~Divide turkey mixture into 4 balls.

~Press down to desired thickness (will shrink some when cooking).

~Place burgers on a plate, cover and refrigerate for at least 3 hours.

~Heat olive oil (2 tablespoons) in a nonstick skillet over medium heat.

~Cook for 5-6 minutes.

~Flip burger and baste with 1/4 cup barbecue sauce.  

~Cook for another 5-6 minutes or until the internal temp is 160 degrees (the temp will rise to 165 while the burger is resting).

~ Transfer onto a wire rack or plate while you assemble the burgers (5 minutes)

~Toast buns if you choose.

~Place cheese on bottom bun.

~Place the burger on over the piece of cheese.

~Put some cucumbers, onions, carrots and lettuce over burger

~Spread some burger sauce on the top bun.

~Place top bun over burger and veggies.

Low-Slow BBQ Ribs

This is one of my favorite rib recipes.  They comes out so tender and tasty.  It 's good with just the dry rub or adding the BBQ sauce at the end.  This does take some planning, but it's worth it.




LOW-SLOW BBQ RIBS
(serves 4)

Ingredients:
*1 slab spare ribs or baby back ribs
*1 teaspoon garlic salt
*1 teaspoon onion powder
*1 teaspoon cumin
*1 teaspoon ground black pepper
*1 teaspoon smoked  paprika
*1 teaspoon chili powder
*1 teaspoon dried oregano
*1/3 cup light brown sugar
*1 1/2 cups barbecue sauce (I make my own)

Directions:
~Mix 1 teaspoon garlic salt, 1 teaspoons garlic salt, 1 teaspoon onion powder, 1 teaspoon cumin, 1 teaspoon ground black pepper, 1 teaspoon smoke paprika, 1 teaspoon chili powder, 1 teaspoon dried oregano, and  1/3 cup light brown sugar, into a small bowl.
~Rub ribs with dry spice rub.
~Wrap in aluminum foil or plastic wrap and refrigerate for 12 -24 hours.
~Preheat oven to 250 degrees.
~Unwrap ribs and place into an oven safe pan, meat side up.
~Bake for 4 hours uncovered.
~Cover pan with aluminum foil add a little water if pan is dry, and bake another 2 hours.
~Remove ribs from oven.
~Turn oven up to 400 degrees.
~Pour 1 1/2 cups bbq sauce over hot ribs.
~Using a pastry brush, spread bbq sauce over tops of ribs.
~Cover and bake for another 20-30 minutes.
~Uncover and bake another 10-15 minutes if you like the sauce cooked a little more.

Pulled Pork Sandwiches with coleslaw

You can make it easier buy using your favorite BBQ sauce, but I think making your own makes it over the top tasty.  I do love no fuss slow cooker meals, especially when making it for a party.  Making your own hamburger buns will even make this better.



PULLED PORK SANDWICHES
(serves 10-14)

Pulled Pork Ingredients:

*Dry Rub (use my recipe or your favorite dry rub)
*5-7 pound pork shoulder roast (pork butt)
*3 onions, cut into quarters
*3 stalks of celery, cut in half
*4 whole garlic cloves
*1 bottle of your favorite barbecue sauce (I can my own BBQ sauce)
*Hamburger buns

Pulled Pork Directions:
~Spread the dry rub all over the 5-7 pound pork shoulder.
~Cover with plastic wrap and refrigerate over night (or at least 8 hours).
~Remove pork from refrigerator.
~Preheat oven to 300 degrees.
~Place pork into a large pot.
~Place 3 quartered onions, 3 stalks celery cut in half, and 4 cloves garlic over roast.
~Cover and cook or 7-8 hours.
~Remove from oven and put pork onto a large cutting board.
~Remove any fat, and then shred pork.
~Disscard celery.
~Chop up cooked onion and garlic and mix into pork.
~Place pot on burner over medium-high heat and add1/2 cup water.
~Scrape bottom of pan to deglaze pan (remove left over meat from bottom of pan).
~Cook for 4-5 minutes. 
~Pour in 1 bottle of your favorite Barbecue sauce and heat up.
~Remove from heat and add in shredded pork.

Coleslaw Ingredients: (optional)
*1/2  head green cabbage, shredded
*1 carrot, grated
*1/2  red onion, thinly sliced
*1/8 cup dijon mustard
*3/4 cups mayonnaise
*1 1/2 teaspoons apple cider vinegar (can use white vinegar too)
*Juice from 1/2 small lemon
*1/2 teaspoon granulated sugar
*1/4 teaspoon celery seed
*1/2 teaspoon salt
*1/4 teaspoon ground black pepper

Coleslaw Directions:
~In a large bowl, mix 1/2 head shredded cabbage, 1 grated carrot, 1/2 sliced red onion, 1/8 cup dijon mustard, 3/4 cup mayonnaise, 1 1/2 teaspoons apple cider, 1/2 teaspoon granulated sugar, 1/4 teaspoon Clery seed, 1/2 teaspoon salt and 1/4 teaspoon ground black pepper and mix well.
~Cover and refrigerate for at least 3 hours.


Making the Sandwich:
~Spread butter on the inside of all of the hamburger buns.
~Toast buns, butter side down, in a large skillet over medium-low heat until golden brown.
~Spoon bbq pork onto bottom buns.
~Spoon desired amount of coleslaw over top of cheese.
~Place top bun on and enjoy.

BBQ Beef Sandwich

I love meals that I can cook in the slow cooker.  This is easy and so good.  A great meal for a pot-luck dinner too.


BBQ BEEF SANDWICH
(serves 12)

Ingredients:
*3 pound chuck roast, rinsed & dried
*1 large onion, chopped
*2 garlic cloves, minced
*2 tablespoon olive oil
*1 pound cherry/grape tomatoes, sliced
*3 cups barbecue sauce (I make my own)
*1 teaspoon salt
*1 teaspoon black pepper
*12 hamburger buns

Directions:
~In a large, heavy pot or dutch oven, heat 2 tablespoons olive oil over medium heat.
~Add 1 chopped onion and 2 minced garlic cloves, cook until onions are translucent.
~Add 1 pound cherry tomatoes.
~Add 3 cups barbecue sauce.
~Increase heat to medium high heat for about 10 minutes.
~Add roast.
~Bring heat down to a low simmer, cover and cook about 4 hours or until roast is falling apart tender, stirring occasionally.
~Remove the roast from the pot.
~Separate the roast into small pieces & set aside.
~Increase the heat to medium-high, uncover, cook until the liquid reduces and becomes thick.  Stir often so it won't burn.
~Return roast to pot.
~Add 1 teaspoon salt and 1 teaspoon pepper and heat meat throughly.
~Scoop onto buns & serve.

Variations:
`add pepperoncini to sandwich
`add a slice of your favorite cheese to sandwich

BBQ Ribs

This is so good and tender. I make ribs many different ways, but this is the families and mine favorite way. The BBQ sauce is sooooo good!!

BBQ RIBS
(serves 4)

Ingredients:
*2 1/2 pounds baby back pork ribs
*1 small onion, cut in half
*2 garlic cloves, chopped
*1/2 medium onion, chopped fine
*2 teaspoons minced garlic
*1 1/2 cups water
*1 (6 ounce) can tomato paste
*1/2 cup white vinegar
*1/2 cup brown sugar
*2 tablespoon honey
*1 tablespoon dark molasses
*2 tablespoons worcestershire sauce
*1 1/4 teaspoons liquid smoke flavoring
*1/4 teaspoon cayenne pepper
*2 teaspoons salt
*1/2 teaspoon black pepper
*1/4 teaspoon smoked paprika
*1/4 teaspoon onion powder

Directions:
~In a medium saucepan, 1/2 chopped onion, 2 teaspoons minced garlic, 1 1/2 cups water, 1 (6 ounce) can tomato paste, 1/2 cup vinegar, 1/2 brown sugar, 2 tablespoons honey, 1 tablespoon molasses, 2 tablespoons Worcestershire sauce, 1 1/4 teaspoons liquid smoke, 1/4 teaspoons cayenne pepper, 2 teaspoons salt, 1/2 teaspoon ground black pepper, 1/4 teaspoon paprika, and 1/4 teaspoon onion powder, over medium heat.
~Bring to a boil.
~Reduce heat, and simmer for 1-2 hours, or until sauce thickens.
~Put 2 1/2 pounds ribs, 1 small onion cut in half, and 2 teaspoons minced garlic in a large saucepan.
~Cover with water (a couple inches over the ribs).
~Bring to a boil.
~Reduce heat to medium and cook ribs, covered, 1 1/2 hours.
~Remove ribs from stock pot.
~Preheat oven to 400 degrees.
~Place ribs on a baking sheet.
~Brush BBQ sauce over ribs.
~Bake for 15-20 minutes, rubbing more sauce on as needed.
Variations:
-substitute the homemade BBQ sauce for your favorite store bought BBQ sauce.
-you could also grill in rather than put in oven.
-you can also do a slow cook after the boil. Set oven to 200 degrees for 1-2 hours.

BBQ Chicken

I love the BBQ Sauce that goes on this chicken. I also use this for sauce for ribs.


BBQ CHICKEN
(serves 6)

Ingredients:
*6 chicken breasts (I use boneless, skinless)
*1/2 medium onion, chopped fine
*2 teaspoons minced garlic
*1 1/2 cups water
*1 (6 ounce) can tomato paste
*1/2 cup white vinegar
*1/2 cup brown sugar
*2 tablespoon honey
*1 tablespoon dark molasses
*2 tablespoons worcestershire sauce
*1 1/4 teaspoons liquid smoke flavoring
*1/4 teaspoon cayenne pepper
*2 teaspoons salt
*1/2 teaspoon black pepper
*1/4 teaspoon smoked paprika
*1/4 teaspoon onion powder

Directions:
~In a medium saucepan, 1/2 medium chopped onion, 2 teaspoons minced garlic, 1 1/2 cups water, 1 (6 ounce) can tomato paste, 1/2 cup vinegar, 1/2 cup brown sugar, 2 tablespoons honey, 1 tablespoons molasses, 2 tablespoons Worcestershire sauce, 1 1/2 teaspoons liquid smoke, 1/4 teaspoon cayenne pepper, 2 teaspoons salt, 1/2 teaspoon ground black pepper,1/4 teaspoon  paprika, and 1/4 teaspoon onion powder, over medium heat.
~Bring to a boil.
~Reduce heat, and simmer for 1-2 hours, or until sauce thickens.
~Preheat oven to 350 degrees.
~Place 6 chicken breasts in a 9x13 inch baking pan.
~Cover with aluminum foil, and bake for 15 minutes.
~Remove from oven and drain and grease.
~Pour 1 cup of BBQ Sauce over chicken.
~Cover and bake for 30 minutes.
~Uncover and continue baking another 30 minutes, or until chicken in done. Basting every every 15 minutes with reserved BBQ Sauce.

Pulled BBQ Chicken Sandwich

This is a good meal for a busy day. Just throw in in the slow cooker and go do what you need to do. You will have a hot yummy dinner when you return. I posted two types of BBQ Sauce. One sweeter the other spicy.

 

PULLED BBQ CHICKEN 
(serves 6-8)

Ingredients:
*5 good-sized boneless, skinless, chicken breasts.
*1 cup chicken stock.

Sweet BBQ Sauce
*2 tablespoons butter, melted
*1/4 sweet onion, chopped very fine
*2 garlic cloves, minced
*2 cups ketchup
*2 cups tomato sauce
*1/2 cup brown sugar
*1 cup Italian red wine vinegar
*1/4 cup dark molasses
*4 teaspoons hickory-flavored liquid smoke
*1/4 teaspoon chili powder
*1 teaspoon paprika
*1/2 teaspoon celery seed
*1/4 teaspoon cinnamon
*1/2 teaspoon cayenne pepper (depending on how spicy you want it)
*1 teaspoon sea salt
*1 teaspoon pepper
*1 (6 ounce) can tomato paste (use an hour before you are going to serve it, if sauce needs to be thicken up)


Directions:
~Heat 1 cup chicken stock in a frying pan to a low simmer.
~Add 5 chicken breasts to the stock.
~Cook chicken 2-3 minutes on each side.
~Remove chicken from pan and cool.
~In the crock pot, mix 2 tablespoons butter, 1/4 finely chopped sweet onion, 2 mince garlic cloves, 2 cups ketchup, 2 cups tomato sauce, 1/2 cup brown sugar, 1 cup Italian red wine vinegar, 1/4 cup molasses, 4 teaspoons liquid smoke, 1/4 teaspoon chili powder, 1/2 teaspoon celery seed, 1/4 teaspoon ground cinnamon, 1/4 teaspoon cayenne pepper, 1 teaspoon salt, 1 teaspoon ground black pepper, and 1 (6 ounce) can tomato paste.
~Place chicken into crock pot.
~Cover, and cook 3 to 4 hours on high or 6-8 hours on low.
~Uncover, and if needed shred chicken.
~Scoop unto rolls and serve. 

Variation:
`Add slice of favorite cheese on top of Pulled BBQ sandwich, then cover with butter.

Chicken Monterery

I have two different ways I make this. This one has BBQ Sauce (6-1-10) on it. Next time I make it, i'll post the other recipe. Having a good BBQ sauce it a must for this recipe.



CHICKEN MONTEREY 
(serves 4)

Ingredients:
*1 tablespoon butter
*1/2 cup onions, chopped small
*1/2 cup red bell pepper, chopped small
*1/2 cup mushrooms, chopped small
*8 slices of bacon (should be very crisp)
*4 boneless, skinless chicken breasts
*salt & pepper to taste
*1/2 cup barbecue sauce (I make my own - posted 6/1/10)
*1 cup monterey cheese, shredded

Directions:
~Preheat oven to 400 degrees.
~Pound 4 boneless chicken breasts to somewhat flat.
~Season chicken breast with salt & pepper to taste.
~Cut 8 slices of  bacon in half, place on cookie sheet and bake for 10-15 minutes. (make sure it doesn't burn).
~Melt 1 tablespoon butter over medium heat, in an oven proof skillet
~Sauté 1/2 cup chopped onion, 1/2 cup chopped red bell pepper and 1/3 cup chopped mushrooms for about 3-5 minutes.
~Remove onion, red pepper, & mushrooms from skillet and set aside.
~ Cook chicken breast in the small skillet until done. (until juices run clear)
~Pour 1/2 cup barbecue sauce over the top of the four chicken breasts.
~Place two pieces of bacon  (4 if you cut them in half) over the barbecue sauce.
~Sprinkle the cooked onions, red peppers, & mushrooms over the top of the bacon.
~Sprinkle cheese over it all.
~Place skillet in the oven and broil, until the cheese is melted and bubbly.

Variations:
`Marinate chicken in 1 cup teriyaki marinade for at least 2
hours.
