Slim Jim Sandwich

This is my version of the Big Boy "Slim-Jim". It's not the same, but as close as I could get it. To bad I can't find the bread they use.


SLIM JIM SANDWICH 
(serves 2)

Ingredients:
~1/4 cup mayonnaise
~1 teaspoon onion, finely chopped
~1/2 teaspoon dill pickle relish
~1/2 teaspoon dill pickle juice
~(10 ounces) Virginia baked ham, sliced thin
~(6 ounces) Swiss cheese, sliced thin
~2 (6 inch), hoagie style sub buns
~1 tomato, thinly sliced
~shredded lettuce
~4 dill pickle slices
~2 tablespoons butter, softened

Directions:
~In a small bowl, mix mayonnaise, onion, dill relish, & dill pickle juice.
~Cover and let sit for at least 2 hours.
~Heat griddle or skillet over medium hight heat. (Can you a the George Forman Grill or Panini maker for this too).
~Butter the inside of the grill.
~Place on griddle and toast to a golden brown.
~Remove from griddle.
~Start layer your sandwich, (bottom toasted side), in this order.
Ham, cheese, lettuce, tomato.
~On the top part of the toasted bun, spread the mayonnaise mixture.
~Close sandwich.
~Place sandwich bottom side down on griddle.
~Place a heavy skillet over top half of sandwich. (I use a cast iron pan, or an aluminum foil covered brick).
~Grill until cheese melts, flipping half way through. 
~Remove from griddle, cut in half and place a dill pickle slice on top of both half of sandwiches.
