The mixture of these meat and graham crackers sounds weird, but they are very tasty. I like to serve them over rice.
MIXED UP MEATBALL
(makes 20-22)
Ingredients:
*2 ( ounce) cans tomato soup
*1 1/4 cups brown sugar, packed
*1/2 cup white vinegar
*1 teaspoon Worcestershire sauce
*1 tablespoon mustard
*1 teaspoon ground black pepper
*1 1/2 teaspoon salt
*1/4 small yellow onion, chopped very fine
*1 pound ham, ground fine
*1 pound ground beef
*1 pound ground pork
*1 1/2 cup graham crackers, ground fine (or use saltines)
*2 large eggs, beaten
*1 cup milk
Directions:
~Preheat oven to 350 degrees.
~Spray a 9x13 inch pan with cooking spray.
~In a small mixing bowl, whisk tomato soup, brown sugar, vinegar, Worcestershire sauce, mustard, onion, salt and pepper together.
~Spread a thin layer of sauce on the bottom of the prepared pan.
~In a large mixing bowl, combine ground ham, ground beef, ground ham, graham cracker crumbs, eggs and milk. until well mixed (add more graham cracker crumbs if the mixture is to thin to make meatballs out to them).
~Make fist sized meatballs and place in prepared pan.
~Pour remaining sauce over top of meatballs.
~Cover with aluminum foil and bake for 50 minutes.
~Remove foil and bake for another 10 minutes.
