The mixture of these meat and graham crackers sounds weird, but they are very tasty. I like to serve them over rice.
MIXED UP MEATBALL
(makes 20-22)
Ingredients:
*2 (10.5 ounce) cans tomato soup
*1 1/4 cups brown sugar, packed
*1/2 cup white vinegar
*1 teaspoon Worcestershire sauce
*1 tablespoon mustard
*1 teaspoon ground black pepper
*1 1/2 teaspoon salt
*1/4 small yellow onion, chopped very fine
*1 pound ham, ground fine
*1 pound ground beef
*1 pound ground pork
*1 1/2 cup graham crackers, ground fine (or use saltines)
*2 large eggs, beaten
*1 cup milk
Directions:
~Preheat oven to 350 degrees.
~Spray a 9x13 inch pan with cooking spray.
~In a small mixing bowl, whisk 2 (10.5 ounce) cans tomato soup, 1 1/4 cups brown sugar, 1/2 cup vinegar, 1 teaspoon Worcestershire sauce, 1 tablespoon mustard, 1/4 finely chopped onion, 1 1/2 teaspoons salt and 1 teaspoon pepper together.
~Spread a thin layer of sauce on the bottom of the prepared pan.
~In a large mixing bowl, combine 1 pound ground ham, 1 pound ground beef, 1 pound ground ham, 1 1/2 cus graham cracker crumbs, 2 large beaten eggs and 1 cup milk until well mixed (add more graham cracker crumbs if the mixture is to thin to make meatballs out to them).
~Make fist sized meatballs and place in prepared pan.
~Pour remaining sauce over top of meatballs.
~Cover with aluminum foil and bake for 50 minutes.
~Remove foil and bake for another 10 minutes.
