If you like chicken scampi or if you like cheese, you are going to love this. So easy to make. If you want to make it even easier substitute the fresh cooked chicken breast with a couple cans of canned-flaked chicken breast (although fresh is always better). This dip goes quick!
CHICKEN SCAPMI DIP
(serves 8 )
*1/4 cup butter
*1 chicken breast, cooked & shredded (about 2 cups)
*8-10 garlic cloves, minced
*1/2 teaspoon red pepper flakes
*1/2 cup chicken stock
*4 tablespoons freshly squeezed lemon juice
*1/2 teaspoon sea salt
*1/4 teaspoon ground black pepper
*1 (8 ounce) package cream cheese, room temperature
*1/4 cup sour cream
*1/4 cup plain greek yogurt
*1/4 cup mayonnaise
*1 tablespoon dried parley flakes
*1 cup mozzarella cheese, shredded
*1/4 cup fresh grated parmesan cheese
~Preheat oven to 350 degrees.
~Spray a 9x13 inch pan with a cooking spray.
~In a large skillet, over medium heat melt butter.
~Add cooked shredded chicken, garlic and red pepper flakes.
~Cook for 2-3 minutes.
~Add chicken stock, lemon juice, salt and pepper.
~Bring so a simmer and remove from heat.
~Mix in cream cheese, sour cream, greek yogurt, mayonnaise, parsley flakes, 1/2 cup mozzarella cheese and parmesan cheese.
~Spread mixture into prepared pan.
~Sprinkle remaining mozzarella cheese over mixture.
~Bake for 10-12 minutes.
~Serve while hot with toasted french bread slices, bagel chips, or crackers.
