Oatmeal Chip Cookie

I love the mixture of chocolate & butterscotch chips.  This cookie is soft, chewy & delicious.  The only problem is trying to just eat one.





OATMEAL CHIP COOKIES
(4 dozen)

Ingredients:
*1 cup butter, softened
*1 cup light brown sugar, packed
*1/2 cup granulated sugar
*2 large eggs
*2 teaspoons pure vanilla extract
*1 1/2 cups all-purpose flour
*1 teaspoon baking soda
*1 teaspoon salt
*3 cups, old fashion oatmeal
*2 cups chocolate chips
*1 cup butterscotch chips
*1 cup walnuts, chopped (optional)

Directions:
~In a large mixing bowl, cream together butter, brown sugar & granulated sugar until very smooth.
~Beat in eggs one at a time.
~Stir in vanilla.
~In another bowl, sift flour, baking soda & salt.
~Mix flour ingredients into butter mixture.
~Mix in oatmeal.
~Mix in nuts, chocolate chips & butterscotch chips.
~Cover bowl & refrigerate for 1-2 hours.
~Preheat oven to 325 degrees.
~Using a cookie scoop or a tablespoon drop onto a cookie sheet.
~Bake for 10-12 minutes.
~Allow cookies to cool on the cookie sheet for 5 minutes.
~Remove and let finish cooling on a wire rack.
