Biscuits & Gravy Casserole

 I make mine with homemade biscuits, but you can use Grand Biscuits if you prefer.   

BISCUITS & GRAVY

(serves 8)


Caserole Ingredients:

*homemade biscuits (or 1 package of grands 8 count refrigerated biscuits)

*1 pound breakfast sausage 

*1/2 pound bacon 

*1/2 small yellow onion, chopped 

*6 large eggs

*1/4 teaspoon ground black pepper

*1/4 teaspoon salt

*1-2 cups cheddar cheese, shredded

Gravy Ingredients:

*4 tablespoons butter

*4 tablespoons all-purpose flour

*2 cups half & half

*1 teaspoon butter garlic seasoning (optional)

*1/2 teaspoon ground black pepper

*1/2 teaspoon salt


Casserole Directions:

~Preheat oven to 350 degrees.

~Spray a 9X13 inch baking dish with cooking spray.

~Cut1 package of  uncooked biscuits into small pieces, place dough evenly in the bottom of the prepared pan (If making homemade biscuits, roll out and cut into bite-size pieces).

~Heat up a large skillet (I use cast iron).

~Cut up 1/2 pound bacon into small pieces and fry in hot pan until crispy.

~Remove from pan and place on paper towel to drain grease.

~Sprinkle bacon over biscuits.

~Drain grease from frying pan.

~In the same skillet, brown 1 pound ground sausage and 1/2 small chopped onion, until sausage crumbles and is no longer pink.

~Remove from skillet and drain any excess grease

~Sprinkle cooked sausage evenly over biscuit dough.

~Sprinkle 1-2 cups shredded cheddar cheese over sausage and bacon.

~In a medium bowl, whisk 6 large eggs, 1/4 teaspoon salt, and 1/4 teaspoon pepper until well incorporated.

~Pour eggs evenly over sausage layer.

~In the same skillet that you cooked the sausage in, melt 4 tablespoons butter.

~Whisk in 4 tablespoons all-purpose flour,  1/2 teaspoon salt and 1/2 teaspoon pepper, 1 teaspoon butter garlic seasoning and cook for 1-2 minutes, whisking the entire time.

~Slowly drizzle 2 cups half & half into sausage flour mixture, whisking until all of the milk is mixed in.

~Bring mixture to a boil and allow to thicken (coats the back of spoon).

~Drizzle gravy evenly over over egg mixture.

~Bake uncovered for 30-40 minutes, or until bubbly and eggs are set.

Bacon Sausage

 I like this sausage the way it is, but if can add 1/2 teaspoon maple flavoring or 2 tablespoons maple syrup if you like maple flavored ice cream.  Easy to freeze.   Make the patties on place them on a cookie sheet (placing a sheet of parchment paper between layers).   Once frozen, place sausage patties into ziplock bag and seal.  Cook frozen over medium-low heat for about 5 minutes per side.


BACON SAUSAGE

(makes 20)


Ingredients:

*2 pounds ground pork

*2-3 slices uncooked bacon, chopped very small (I use kitchen scissors to cut it cup)

*1 tablespoon fresh sage leaves, chopped fine (or 1/2 tablespoon dried)

*2 teaspoons fresh thyme leaves, chopped (or 1/2 teaspoon dried)

*1 teaspoon fennel seeds, crushed (I put them in a plastic bag and gently smashed them with a meat mallet).

*1/4-1/2 teaspoon crushed red pepper flakes (optional)

*1/8 teaspoon ground nutmeg 

*1 1/2 teaspoons sea salt

*1 teaspoon ground black pepper 

*1-2 tablespoon vegetable oil, for frying (optional)


Directions:

~Place 2 pounds ground pork and2-3 slices  bacon pieces into a large bowl.

~Mix 1/2 tablespoon dried sage, 1/2 teaspoon thyme, 1 teaspoon crushed fennel seeds, 1/4-1/2 teaspoons red pepper flakes, 1/8 teaspoon nutmeg,  1 1/2 teaspoon salt and 1 teaspoon ground black pepper into a small bowl.

~Sprinkle over meat mixture and mixed well.

~Using a 1/4 measuring cup, scoop out pork mixture.

~Roll into a ball, and then flatten into about a 2 1/2 inch patties.

~Heat vegetable oil into a large skillet over medium heat.

~Fry sausage patties about 2-3 minutes per side.
