Roasted Red Pepper & Onion Dip

Caramelizing the onions is the trick that makes this dip so good. Use it with potato chips, crackers, veggies, or bagel chips.


ROASTED RED PEPPER & ONION DIP

Ingredients:
*2 large yellow onions, sliced
*4 tablespoons butter
*1/4 cup olive oil
*1/4 teaspoon ground cayenne pepper
*1/4 teaspoon dill weed
*1/4 teaspoon garlic powder
*1 teaspoon salt
*1/2 teaspoon ground black pepper
*4 ounces cream cheese, room temperature
*1/2 cup sour cream
*1/2 cup mayonnaise
*1/8 cup roasted red peppers, chopped fine

Directions:
~Slice 2 large yellow onions in half & then into 1/8 inch slices.
~Heat 4 tablespoons butter and 1/4 cup olive oil in a large sauté pan over medium heat.
~Add onions, 1/4 teaspoon cayenne pepper, 1 teaspoon salt and 1/2 teaspoon ground black pepper.
~Sauté for 10 minutes.
~Reduce heat to medium-low and cook for 20-25 minutes, stirring occasionally, until onions are browned and caramelized.
~Remove from heat and let onions cool.
~In a mixing bowl, mix 4 ounces cream cheese,  1/2 cup sour cream, 1/2 cup mayonnaise, 1/4 teaspoon garlic powder and 1/4 teaspoon dill weed, mix until smooth.
~Add onions & roasted red peppers and mix well.
~Refrigerate for at least 3 hours to let flavors come together.
~Remove dip, and serve at room temperature.


Variations:
`add 1/4 cup bacon, cooked and crumbled
