This is a recipe I remember from the 70's. My grandson asked me to make it for his birthday.
COKE-A-COLA CAKE
(serves 12-16)
Cake Ingredients:
*2 cups all-purpose flour
*2 cups granulated sugar
*1 teaspoon baking powder
*1/2 cup butter (1 stick)
*1/2 cup crisco
*3 tablespoons unsweetened cocoa
*1 cup coke-a-cola
*1/2 cup buttermilk
*1 1/2 teaspoons pure vanilla extract
*2 large eggs, room temperature
Frosting Ingredients:
*1/2 cup butter (1 stick)
*3 tablespoons unsweetened cocoa
*6 tablespoons coke-a-cola
*2 cups powdered sugar, sifted
Cake Directions:
~Preheat oven to 350 degrees
~Grease and flour a 9x13 inch baking pan.
~In a large bowl, whisk 2 cups all-purpose flour, 2 cups granulated sugar, and 1 teaspoon baking powder and set aside.
~In a medium saucepan, bring 1/2 cup butter, 1/2 cup crisco, 3 tablespoons unsweetened cocoa, and 1 cup coke-a-cola to a boil.
~Pour over dry ingredients.
~Stir in 1/2 cup buttermilk, 1 1/2 teaspoons vanilla extract and 2 large eggs until well combined.
~Pour into prepared baking dish.
~Bake for 35-45 minutes, or until a toothpick inserted in the center comes out clean.
~Poke small holes in top of cake.
Frosting Directions:
~In a medium saucepan, over medium heat, combine 1/2 cup butter, 3 tablespoons unsweetened cocoa, and 6 tablespoons coke-a-cola and bring to a boil.
~Stir in 2 cups sifted powdered sugar and stir until well incorporated.
~Remove from heat and pour over hot cake.
~Serve warm or cold.
