Coconut Cookies

 I'm not a white chocolate fan, but love them in this recipe.   I shared them with the staff when I went to PT and one young lady really wanted me to post this recipe, so I am.  BTW,  you can leave out the chips and dried cranberries if. you want.




COCONUT  COOKIES

(makes 3 dozen)


Ingredients:

*2 cups all-purpose flour (240 grams)

*1/2 teaspoon salt

*1 teaspoon baking soda

*3/4 cup butter, softened

*1/2 cup light brown sugar, packed

*1/2 cup granulated sugar

*1 large egg

*1/2 teaspoon almond extract (or 1 teaspoon vanilla extract)

*2 cups shredded sweetened coconut

*1 large egg, room temperature 

*1-2 cups white chocolate chips

*1/2 cup dried cranberries


Directions:

~Preheat oven to 350 degrees.

~Line cookie sheets, with parchment paper 

~In a large mixing bowl,  cream 3/4 cup softened butter, 1/2 cup packed  light brown sugar, and 1/2 cup granulated sugar until smooth.

~Beat in 1 large egg and 1 teaspoon vanilla extract

~Stir in 2 cups all-purpose flour, 1/2 teaspoon salt, and 1 teaspoon baking soda until well incorporated.

~Fold in 1-2 cups white chocolate chips and 1/2 cup dried cranberries.

~Scoop dough into about 2-inch balls on prepared cookie sheet (leaving about 2-inch space between cookies).

~Bake for 10-12 minutes .

~Remove from oven and allow to cool on cookie sheet for 4-5 minutes and then transfer onto a cooling rack.
