I am not big on lemon desserts, but I do like these.
LEMON SUGAR COOKIES
(2 1/2 dozen)
Ingredients:
*2 2/3 cups all-purpose flour
*1 teaspoon baking powder
*1/2 teaspoon baking soda
*1/4 teaspoon salt
*2 cup butter, room temperature butter
*1 1/2 cups granulated sugar
*2 tablespoons packed light brown sugar
*2 egg yolks
*2 tablespoons lemon zest (4-5 lemons)
*1 tablespoon fresh squeezed lemon juice
Topping Ingredients:
*1/3 cup granulated sugar (I like to use course sugar for the top)
*1/4 cup fresh squeezed lemon juice
Directions:
~Preheat oven to 350 degrees.
~Line a baking sheet with parchment paper or a silicone mat.
~In a large mixing bowl, whisk flour, baking powder, baking soda and salt together.
~In a separated bowl, mix butter, brown sugar, and granulated sugar together until creamy and fluffy.
~Mix in egg yolks, lemon zest and lemon juice until well combined.
~Mix in flour mixture until well mixed.
~Cover bowl and refrigerate for 1 hour.
~Scoop dough out with a cookie scoop and roll into a ball (about 1 1/2 inch).
~Roll cookie dough in sugar coating all side.
~Place on cookie sheet.
~Gently flatten dough with a spatula.
~Using a pastry brush, brush some lemon juice over top.
~Sprinkle some more sugar on top of cookie dough.
~Bake for 11-14 minutes, or until cookie is done.
~Remove from oven and move onto a cooling rack.
~Cool completely before eating.
