PUMPKIN DUMP CAKE
(serves 12)
Ingredients:
*1 (15 ounce) can pumpkin puree
*1 (12 ounce) can evaporated milk
*4 large eggs
*1 1/2 cups granulated sugar
*1 1/2 teaspoons ground cinnamon
*1/2 teaspoon ground nutmeg
*1/2 teaspoon ground ginger
*1/4 teaspoon ground cloves
*1/2 teaspoon salt
*1 (18.25 ounce) box yellow cake mix
*1 1/2 cups pecans, chopped
*1 cup butter, melted
Directions:
~Preheat oven to 350 degrees.
~Spray a 9x13 inch baking pan or two 8 inch round pans with a cooking spray.
~In a large mixing bowl, combine pumpkin, evaporated milk, eggs, sugar, cinnamon, nutmeg, ginger, cloves & salt until it is mixed completely.
~Sprinkle dry cake mix over the top of the pumpkin mixture, gently pat down.
~Sprinkle pecans over cake mix.
~Drizzle with melted butter.
~Bake for 70-80 minutes, or until done (cake is done, when you insert a toothpick or knife and it comes out clean).
