CROWD SIZE CHEESY POTATOES
(serves 60)
Ingredients:
*6 (2 pound) bags southern style hash browns, thawed
*3 (26 ounce) cans cream of chicken soup
*3 (16 ounce) sour cream
*1 pound butter, melted
*2 (16 ounce) bags of shredded cheddar cheese
*2 large onions, chopped (optional)
*2 teaspoons garlic powder
*2 teaspoons black pepper
*3 teaspoons salt
Directions:
~Spray roaster with a cooking spray.
~Mix soup, sour cream, butter, onion garlic powder, salt & pepper in roaster.
~Add cheese & mix well.
~Stir in hash browns until well coated.
~Turn roaster onto 275 degrees.
~Bake for 5-6 hours, stirring every so often.
**I've had a lot of people as me if they can just put this in a large roaster pan at the same temp. You could. You can also put the temp up to 350 and cook it for about 2 hours. I would stir it everyone once in a while.

Hi - I want to do this recipe but I will need to make it at 1.5 times the recipe, so for 90 people. Do you think it will still fit in the 18 at roaster?
Yes I do. It may be very full at first, but it will cook down some.
How long would you cook this for if you double the recipe?

This recipe worked great! I adjusted it to serve 450. Some suggestions would be to double the amount of cheese called for. Do not fill each roaster for 90 people as discussed in comments above. It made a huge mess and took longer to cook...we eneded up getting out more roasters to separate how much was in each roaster. They cooked better after doing that. We had our roasters set on 325 the entire time, not 275. And I suggest thawing out the potatoes ahead of time. We did that and still barely got ours cooked in 4 hours. I feel that if we hadn't thawed out the potatoes they would have taken twice as long. Lastly, we had three full roasters left over. And we served over 450 people very generous portions. So I feel that maybe the portions figured for this recipe was a little off. Over all, though I loved the way they turned out and we had many compliments! Thank you for sharing this recipe!
I really like this recipe. Was wondering if I could make these the day before the graduation party and just warm them the day of the party?
if having 100 people with other sides would 60 servings be enough or do I need to make more?
If I sub fresh potatoes for the frozen hash browns, how many pounds would you suggest I need? Would it be 12 lbs, same as the amount of hash browns? Anyone tried it with fresh (diced) potatoes?
I want to use dried hash browns instead of frozen. Will this work? How do I adjust measurements & cooking time?

That’s how what I usually make this recipe with is fresh cooked potatoes. Cook them a head of time so they have time to cool before you grate them. This is better then store boughten. Don’t dice them.
I don't have a roaster pan. Will the temperature and baking time be the same if cooked in the oven in an aluminum pan?
I’m wondering the same thing about cooking them in the oven. Did you happen to make them in the oven?
Yes you can cook them in a oven bake at the same temp (just watch the time and stir every once in a while). If you double the size, you will need 2 roasters. My roasting pan in 18 quart. I have put it together the night before, but cooked it the same day as the party (never tried warming it up).
