Chicken Piccata

Super easy recipe to make.  



CHICKEN PICCATA 

(serves 4)


Ingredients:

*2 skinless, boneless chicken breasts, cut in half

*1/2 teaspoon salt

*1/2 teaspoon ground black pepper

*1/2 cup all-purpose flour

*6 tablespoons butter

*5 tablespoon olive oil

*4 garlic cloves, minced

*1/3 cup fresh lemon juice (1 lemon)

*zest from one lemon 

*1/2 cup chicken stock or dry white wine

*1/4 cup capers, drained (optional)

*1/3 cup fresh flat leaf parsley, chopped 


Directions:

~Pound out chicken to 1/4 inch thick.

~Season chicken with salt and pepper.

~Dredge chicken in flour and shake off any excess flour.

~In a large skillet, melt 2 tablespoons butter and 3 tablespoons olive oil.

~When the oil/butter start to sizzle, carefully add the chicken.

~Cook about 3 minutes and each side.

~Remove chicken and transfer onto a plate.

~Add 2 more tablespoons butter and remaining oil to the skillet.

~Add the minced garlic and lemon zest, and stir, cooking for about 1 minute.

~Add the lemon juice, wine/chicken stock, and capers.

~Using a whisk or wooden spoon, stir to deglaze the bottom of the pan.

~Bring to a boil.

~Add chicken breasts and cook for another 5-6 minutes.

~Plate the chicken.

~Whisk the remaining 2 tablespoons of butter.

~Pour sauce over chicken breasts.

~Garnish with parsley.
