ONION ROLLS
(makes 8)
Ingredients:
*1/2 tablespoon olive oil
*1/2 medium onion, chopped
*3/4 cup lukewarm milk (110 degrees)
*5 tablespoons lukewarm water (110 degrees)
*3 tablespoons butter, softened
*3 tablespoons sugar
*1 (.25 ounce) envelope active dry yeast (2 1/2 teaspoons)
*2 teaspoons salt
*1 teaspoon onion powder
*1/4 cup instant potato flakes
*3 cups all-purpose flour
*1 egg white
*1 tablespoon water
*1/8-1/4 cup minced onion
Directions:
~In a small fry pan saute onions in olive oil until translucent.
~Remove and let cool.
~Place in the bread machinein this order, milk, water, butter, salt, sugar, cooled sautéed onions, onion powder, potato flakes, flour and yeast.
~Select the 'Dough Cycle'and press start.
~When the cycle has completed, remove dough from bread machine.
~Knead dough on a lightly floured surface.
~Cut into 8 equal pieces, and form into balls.
~Let them relax for a minute, and then gently flatten the balls until they are about 4" round.
~Place on a baking sheet and cover with a damp towel.
~Let rise until doubled in a draft free area (40-60 minutes).
~Preheat oven to 350 degrees.
~Whisk together the egg white and water in a small bowl.
~Gently bush over the tops of the rolls, and sprinkle with minced onion.
~Bake for 15-20 minutes or until golden brown.
~Brush the buns with butter after they come out of the oven (optional).
~Cool completely before cutting them in half (horizontally).
Variation:
`Substitute minced onions for poppy seeds.
`Substitute minced onions for sesame seeds.
`Substitueminced onions for parmesan cheese.
`Substitue minced onions for 3 tablespoons of garlic powder.

Helpful Hint:
To help with the rising (quicker) of the bread and to make your bread moister add a pan off boiling water to a cold oven and let the bread rise in the oven.
