Chicken Monterery

I have two different ways I make this. This one has BBQ Sauce (6-1-10) on it. Next time I make it, i'll post the other recipe. Having a good BBQ sauce it a must for this recipe.



CHICKEN MONTEREY 
(serves 4)

Ingredients:
*1 tablespoon butter
*1/2 cup onions, chopped small
*1/2 cup red bell pepper, chopped small
*1/2 cup mushrooms, chopped small
*8 slices of bacon (should be very crisp)
*4 boneless, skinless chicken breasts
*salt & pepper to taste
*1/2 cup barbecue sauce (I make my own - posted 6/1/10)
*1 cup monterey cheese, shredded

Directions:
~Preheat oven to 400 degrees.
~Pound 4 boneless chicken breasts to somewhat flat.
~Season chicken breast with salt & pepper to taste.
~Cut 8 slices of  bacon in half, place on cookie sheet and bake for 10-15 minutes. (make sure it doesn't burn).
~Melt 1 tablespoon butter over medium heat, in an oven proof skillet
~Sauté 1/2 cup chopped onion, 1/2 cup chopped red bell pepper and 1/3 cup chopped mushrooms for about 3-5 minutes.
~Remove onion, red pepper, & mushrooms from skillet and set aside.
~ Cook chicken breast in the small skillet until done. (until juices run clear)
~Pour 1/2 cup barbecue sauce over the top of the four chicken breasts.
~Place two pieces of bacon  (4 if you cut them in half) over the barbecue sauce.
~Sprinkle the cooked onions, red peppers, & mushrooms over the top of the bacon.
~Sprinkle cheese over it all.
~Place skillet in the oven and broil, until the cheese is melted and bubbly.

Variations:
`Marinate chicken in 1 cup teriyaki marinade for at least 2
hours.
