White Chocolate Macadamia Cookies

 This is my niece Heidi's favorite cookie.  At least that's what I've been told.   I am not a big white chocolate fan, but this combination is very good.


WHITE CHOCOLATE MACADAMIA COOKIES

(makes 3 1/2 dozen)


Ingredients:

*1 cup butter, softened

*1 cup light brown sugar, packed

*1/2 cup granulated sugar

*2 large eggs, room temperature 

*2 teaspoons vanilla extract

*2 3/4 cups all-purpose flour

*1 teaspoon baking powder

*1 teaspoon baking soda 

*1/2 teaspoon salt

*2 cups white chocolate chips

*1 cup macadamia nuts, chopped


Directions:

~Preheat oven to 350 degrees.

~Line cookie sheets with parchment paper or spray with cooking spray.

~In a large mixing bowl, cream 1 cup softened butter, 1 cup packed brown sugar, and 1/2 cup granulated sugar until creamy and well incorporated.

~Stir in two large eggs.

~Add in 2 3/4 cup all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, and 1/2 teaspoon salt and stir until well incorporated.

~Stir in 2 cups white chocolate chips and 1 cup chopped macadamia nuts.

~Using a cookie scoop, scoop out dough and place on cookie sheet (about 12 per cookie sheet).

~Bake for 10-12 minutes, or just until the edges start to brown (do not over bake).

~Remove from oven and allow to cool on cookie sheet for 3-5 minutes.

~Transfer onto cooling rack to continue cooling.
