HEALTHIER WAFFLES

My family loves to have breakfast for supper, or as we call it 'Brupper'.  The problem is most of my pancake & waffle recipes are not that low calorie or fat.   This is pretty good.   You need to make sure the waffle iron is hot, hot or they don't crisp up (but still are very good).  About 160 calories for the full waffle.


HEALTHIER WAFFLES
(serves 4)

Ingredients:
*1/2 cup all-purpose flour
*1/2 whole wheat flour
*2 teaspoons baking powder
*2 tablespoons sugar
*1/4 teaspoon salt
*2 egg whites
*3/4 cup skim milk
*1/4 cup unsweetened applesauce
*1 teaspoon pure vanilla extract

Directions:
~Turn waffle maker onto high.
~In a large bowl, mix flours, baking powder, sugar & salt.
~In a small bowl, mix egg whites, milk, applesauce & vanilla.
~Whisk the wet ingredients into the dry ingredients, until well mixed.
~When waffle maker is ready, spray with cooking spray (even if it's nonstick).
~Ladle waffle mix into waffle maker.
~Cook until golden brown.
