Soft Caramel Candy
(makes 6-8 dozen)
Ingredients:
*2 cups dark brown sugar
*1/2 cup light corn syrup
*3 tablespoons butter
*1 1/2 cups heavy cream
*2 teaspoons vanilla extract
*1/2 teaspoon sea salt
Directions:
~In a medium saucepan, combine 2 cups dark brown sugar, 3 tablespoons butter, 1 1/2 cups heavy cream, 1/2 cup corn syrup, and1/2 teaspoon salt.
~Heat over medium-low heat, stirring until the butter melts.
~Once the butter has melted, do not stir, cook until temperature reaches 240-245 degrees (15-12 minutes).
~Once in a while, brush the sides down with a pastry brush dipped in water. This helps prevent crystals from forming.
~Remove from heat and stir in 2 teaspoons vanilla.
~Cool for 15-20 minutes (temperature should be around 180-175)
~Pour caramel onto a large piece of parchment paper.
~As it cools, form it into a long rope (you'll have to do this several times).
~Once it s cooled and stops spreading, cut into bitesize pieces.
~Wrap in waxed paper and store into a cool dry place.
**If you want to use this for dipping apples, or marshmallows, cookies, etc have the temperature cool down to 190 before dipping.
