Bacon Shepherds Pie

A really good comfort food with a little twist.   The bacon and roasted tomatoes really give it a lot of flavor.    Use canned or frozen carrots & green beans, although fresh is always better.

(serves 4)

*3 cups mashed potatoes (I used red skins with the skins on)
*4 medium carrots, cooked & mashed
*1 cup steamed green beans, drained
*6 slices bacon, cooked & crumbled
*1/2 onion, chopped
*2 garlic cloves, minced
*3/4 pound ground beef
*1 (16 ounce) container cherry/grape tomatoes
*2 tablespoons flour
*1/2 teaspoon salt
*1/4 cup shredded cheddar cheese
*1 tablespoon ketchup
*1/2 teaspoon ground pepper
*1 cup chicken stock (or beef broth)
*1/2 cup shredded cheddar cheese

~Preheat oven to 400 degrees.
~Place tomatoes on a cookie sheet.
~Bake tomatoes for 20 minutes.
~Remove from oven and set aside.
~Turn oven down to 375 degrees.
~In a medium oven proof skillet, cook hamburger, onions and garlic until hamburger is browned.
~Stir in flour and cook for 1 minute.
~Add ketchup, tomatoes, salt, pepper & chicken stock.
~Bring to a boil.
~Reduce heat, and simmer for 5 minutes.
~Mix in 1/4 cup cheese & 2 pieces of crumbled (1/3) bacon.
~Spread mashed carrots over top of hamburger.
~Spread green beans over top of carrots.
~Spread mashed potatoes over green beans, getting as close to edge as possible.
~Sprinkle remaining bacon & cheese over top.
~Bake for 20 minutes.
