Pizza Lasagna Casserole

A little bit of pizza and a little bit of lasagna makes for a very yummy casserole.   This recipe can also be cooked in a slow cooker.  If you like a little more kick to your food, use spicy Italian Sausage in place of sweet Italain sausage.





PIZZA LASAGNA CASSEROLE
(serves 12)

Ingredients:
*1 pound lasagna noodles, broken into pieces
*1/2 pound sweet Italian sausage
*1 pound ground beef
*1 yellow onion, chopped
*4 garlic cloves, minced
*1 (12 ounce) can tomato paste
*2 (12 ounce cans) tomato sauce
*1/2 cup water
*1 tablespoon dried parsley flakes
*2 teaspoons Italian seasoning
*2 bay leaves
*1 tablespoon sugar
*2 teaspoons salt
*1 teaspoon pepper
*1 pound ricotta cheese
*1 egg
*1 tablespoon dried parsley flakes
*1/2 cup fresh grated Parmesan cheese
*1 teaspoon dried oregano
*1/4 cup sliced pepperoni
*1/2 pound fresh small mozzarella cheese balls
*1 cup shredded mozzarella cheese (or 1/4 pound Mozzerella cheese cut into pieces)


Directions:

~In a large pan, cook sausage, ground beef, onion and garlic over medium heat until browned.
~Drain off any grease.
~Add tomato paste, tomato sauce, water, 1 tablespoon parsley flakes, Italian seasoning, bay leaves, sugar, salt & pepper.
~Bring to a boil, simmer and for 1 hour.
~In a large pot, bring water to a boil.
~Season water with a little salt and drop lasagna noodles in water.
~Boil for 10 minutes and remove from stove.
~Drain any water off of it.
~Mix tomato mixture over the noodles.
~In a medium bowl, mix ricotta cheese, Parmesan cheese, egg, 1 tablespoon parsley & oregano.
~Preheat oven to 375 degrees.
~Mix ricotta cheese mixture & fresh mozzarella cheese balls into noodle mixture until just until lightly mixed.
~Pour into a 9x13 inch pan.
~Sprinkle shredded mozzarella evenly over casserole.
~Place pepperoni over cheese.
~Cover with aluminum foil and bake for 25 minutes.
~Remove foil and bake an additional 20 minutes.
~Remove from oven, allow to cool for 5 minutes before serving.

Variation:
`Slow Cooker Method: 
~In a large pan, cook sausage, ground beef, onion and garlic over medium heat until browned.
~Drain off any grease.
~In a large bowl, mix everything together (do not cook noodles a head of time).
~Pour into slow cooker & cover.
~Cook on high for 4-5 hours or low for 6-7 hours.
