Blueberry & lemon, who knew they were so awesome together. A quick dessert to make, and easy to make.
BLUEBERRY LEMON BARS
*2 cups graham cracker crumbs
*6 tablespoons butter, melted
*1/4 cup granulated sugar
*1 teaspoon freshly squeezed lemon juice
*zest of 1 lemon
*3 large egg yolks
*1 (14 ounce can) sweetened condensed milk
*1/2 cup freshly squeezed lemon juice (about 3 lemons)
*zest 1 lemon
*1 cup fresh blueberries
~Preheat oven to 350 degrees.
~Spray an 8x8 inch baking dish with cooking spray.
~In a food proccesor or mixing bowl, mix graham cracker crumbs, melted butter, granulated sugar, 1 teaspoon lemon juice & lemon zest of 1 lemon.
~Press graham cracker mix into the prepared pan.
~Bake for 10 minutes.
~Allow crust to cool to room temperature.
~In a mixing bowl, mix egg yolk & sweetened condensed milk, until mixed well.
~Stir in 1/2 cup lemon juice & remaining lemon zest, until mixture is smooth and thicken slightly.
~Fold in blueberries.
~Pour the mixture over the graham cracker crust.
~Bake for 15 minutes.
~Cool to room temperature.
~Refrigerate for at least 2 hours.
