Roasted Butternut Squash Medley

This is good as a side dish or over noodles or rice.  It would also be great over spaghetti squash.      


ROASTED BUTTERNUT SQUASH MEDLEY
(serves 4)

Ingredients:
*1 medium butternut squash, peeled
*1 yellow onion, sliced
*2 carrots, peeled & sliced 1-inch thick
*2 apples, peeled, cored & chopped 1-inch thick
*1/2 cup walnuts (optional)
*2 tablespoons honey
*1/2 teaspoon paprika
*1/2 teaspoon cinnamon
*1/4 teaspoon nutmeg
*1/4 cup natural apple juice

Directions:
~Poke peeled squash with a fork (all over the squash).
~Microwave squash for 8-10 minutes, until fairly soft.
~Remove stem from squash and cut into 1-inch chunks.
~Cut squash down lengthwise and remove seeds & pulp.
~Cut into 1-inch cubes.
~Preheat oven to 400 degrees.
~Spray a cooking sheet with cooking spray.
~Put squash into a large bowl.
~Throw in sliced onions, sliced carrots, apples & walnuts
~Add honey, spices & apple juice, mix well.
~Bake in the oven for 30 minutes, or until veggies are tender.
~Remove and let cool for about 5 minutes.
