I have been married to a wonderful Christian man since 1976. The Lord has blessed us with two daughters and two sons. I consider each day the Lord gives me on the earth yet another chance to serve Him.

Cinnamon Pecan Popcorn

This may be my favorite flavor of popcorn.   I need to be careful because I could eat the entire bag of it.  It's simple to make.  to simple for my benefit!


*2 quarts (about 1/2 cup kernels)
*1 cup pecans, roughly chopped
*1 cup light brown sugar, packed
*1 teaspoon ground cinnamon
*1/4 cup light corn syrup
*1/2 cup butter
*1 teaspoon pure vanilla extract
*1/2 teaspoon baking soda
*1/2 cup merkins white chocolate, melted

~Preheat oven to 250 degrees.
~Spray a large roasting pan with cooking spray.
~Pop kernels in an air popper.
~Remove any unpopped kernels.
~Place popcorn in the prepared roasting pan.
~Mix in pecans.
~In a large microwavable bowl, mix brown sugar & cinnamon.
~Dump butter on top.
~Pour corn syrup over top of everything.
~Microwave on high for 30 seconds.
~Remove from microwave and stir until brown sugar is mixed in well.
~Return to microwave and cook for 2 more minutes.
~Remove, stir well, and cook for 2 more minutes.
~Remove and add in vanilla & baking powder.
~Stir until well mixed (it will foam up).
~Pour over popcorn & pecans.
~Stir until popcorn is well coated.
~Bake for 30 minutes, stirring every 10 minutes.
~Remove for oven and dump on wax paper.
~Melt white chocolate in a double boiler over low heat (I do this while the popcorn is in the oven).
~Drizzle chocolate over popcorn.
~Let chocolate cool & set.
~Break apart popcorn mixture and store in zip-loc bag.
