Baked Apple Pancake

The smell of this cooking is the house is awesome.   It also tastes wonderful.   Great for breakfast, lunch, dinner or even a dessert.


(serves 2)

*3 medium size apples, peeled, cored, & sliced thinly (best if you use three different types of apples)
*3 tablespoons butter
*1/8 cup butter
*1/8 cup brown sugar
*1 teaspoon ground cinnamon
*1/8 cup walnuts, chopped
*1/3 cup all-purpose flour
*1 teaspoon white sugar
*1/4 teaspoon baking powder
*1/8 teaspoon baking soda
*1/8 teaspoon salt
*1/3 cup whole milk
*1 egg
*2 teaspoons vegetable oil
*1 teaspoon vanilla

~Preheat oven to 350 degrees.
~Melt butter in a small oven proof skillet.
~Place the apples slices evenly over the bottom of the skillet.
~Bake for 20 minutes, or until apples are soft.
~Remove from oven.
~Sprinkle with brown sugar, nuts & cinnamon.
~In a medium mixing bowl, combine flour, sugar, baking powder, baking soda & salt.
~Make a well in the center.
~In another bowl, beat together egg, milk, vanilla & oil.
~Pour milk mixture into flour mixture.
~Beat until smooth.
~Spread pancake mixture over apples.
~Bake for 40-45 minutes.
~Serve with maple syrup if desired.
