Plum Cake Tatin

So good and different from your normal dessert.  Looks so pretty and inviting to eat.  Elegant yet simple to make.

(Serves 12)


*12 purple italian plums, cut in half & pitted (if you use larger plums, pit them, & slice them
*1 cup white sugar
*1/3 cup water
*6 tablespoons butter, room temperature
*3/4 cup white sugar
*2 large eggs, room temperature
*1/3 cup sour cream
*1/2 teaspoon grated lemon zest
*1 teaspoon pure vanilla extract
*1 cup plus 2 tablespoons all-purpose flour
*1/2 teaspoon baking powder
*1/4 teaspoon salt
*powdered sugar

~Preheat oven to 350 degrees.
~Grease a 9" glass pie pan with butter.
~Arrange the plums in the buttered pie pan, cut side down.
~In a small saucepan, over high heat, combine 1 cup sugar & 1/3 cup water.
~Cook until the water turns light-medium amber in color  (Swirl the pan, do not stir) (Don't Take Your Eyes Off OF IT, it will burn)
~Pour over plums.
~In a mixing bowl, cream the butter & 3/4 cup white sugar, until light & fluffy.
~Lower the speed and add in eggs one at a time.
~Add the sour cream, lemon zest & vanilla, mix until combined.
~In a medium bowl, sift together flour, baking powder, & salt.
~Add to wet ingredients, mix until just mixed (do not over mix).
~Pour the cake batter over plums.
~Spread caked batter evenly over plums.
~Bake for 35-40 minutes, or until cake is done.
~Cool for 15 minutes.
~Invert the cake onto a plate.
~Cool for 15 minutes, then dust with powdered sugar.
~Serve warm or room temperature.

`add 1 cup rhubarb, chopped small, placed over the plums.
`add 1 cup peaches, sliced thin.  Put plums on the outer edge of pan and peaches in the center.
`substitute plums with granny smith apples, peeled, cored & sliced.  Use enough apples to fill the bottom of the pan.  I would also add a little cinnamon & nutmeg to cake batter.
`substitute plums with a mixture of apples, strawberries, raspberries, blackberries & blueberries, enough to fill the bottom of the pan.
`substitue plums with pears,  slice and fill bottom on the pan.

Helpful Hint:
If your plums are very sweet, decrease the amount of sugar you are using in the water.
