This is easy and quick to make. Makes a great dip with tortilla chips or even with veggies.  I made my guac chunky, but you can chop up or puree the tomatoes much small if you choose.

GUACAMOLE (serves 8)

*3 avocados, peeled, pitted, and mashed
*1 lime, juiced
*1 1/2 teaspoons salt
*1/2 teaspoon cumin 
*1/2 cup red onion, diced small
*3 tablespoons fresh cilantro, chopped
*2 roma plum tomatoes, diced
*1 tablespoon chopped fresh cilantro
*2 teaspoons garlic, minced
*1/8 teaspoon ground cayenne pepper (optional)

~Mash the avocados, with lime juice & salt in a medium bowl.
~Mix in onion, cilantro, tomatoes, cayenne pepper, and garlic.
~Refrigerate for 1 hour and serve.

**Do not make up to far in advance, because it will turn brown.
